Traditional Cheesecake Recipe

I would like to share with you my recipe for a traditional, baked cheesecake. I hope all those who try it enjoy this, creamy cheesecake.

Traditional Cheesecake

Ingredients

For the base:

8 oz Digestive Biscuits

4 oz Butter

For the filling:

11/2 lb Curd Cheese

3 Eggs

8 oz Sugar

1 tspn Vanilla Essence

Double or Whipping Cream and Fruit to Decorate (I use strawberries and kiwi fruit)

Preheat the oven to Gas Mark 2 (150C)

Lightly Grease a deep, 7-8" Dish or Tin

Make The Biscuit Base

Reduce the digestive biscuits to crumbs, either by putting in a sealed polythene bag and crushing with a rolling pin, or in a blender.

Melt the butter in a saucepan over a low heat. Do not allow to boil.

Remove the melted butter from the heat and mix the biscuit crumbs in with the butter.

Put the biscuit mixture into a deep, 7-8" dish or tin and compress with the back of a spoon.

Make Cheesecake Mix

Blend the cheese, eggs and sugar until smooth. Stir in the vanilla essence, and pour the mixture onto the base.

Bake in the oven for 30 minutes. Turn off the oven and leave the cheesecake in the oven to cool.

When cool, transfer the cheesecake to the fridge and leave overnight.

Decorate

Whip the cream until stiff, then decorate the top of the cheesecake, using an icing bag and nozzle.

Decorate with fruit.

This should give you between 8 and 12 servings depending on the size of the tin.
