Harsch Crock Pot

Healthy, Natural, Tried and True

Fermented vegetables are very important for healthy nutrition even if every time one sees the word “fermented”, images of grapes and sweet wine come to mind. Actually, natural fermentation is one of the oldest and healthiest means of preservation and the Harsch Fermenting Crock Pots from Germany produce perfect pickled vegetables in the simplest manner possible. The lactic acid renders a pleasantly sour taste and it is rich in vitamin and minerals. Fermentation is the only method of preservation that retains all the natural ingredients while improving their quality, taste and aroma.

Recently in the news, sauerkraut and pickled vegetables fermented with lactic acid are now being credited with correcting body imbalances, which often lead to acid reflux problems. Sauerkraut, which is a particular specialty of the Harsch Fermenting Crock Pot, is among the healthiest foods in the world. James Cook, British navigator and explorer, protected his crew from scurvy by providing them with sauerkraut and its high volume of vitamin C on their long voyages.

Also known as the Gairtopf Fermenting Crock Pots in Germany, these beautifully crafted stoneware crock pots utilize ceramic weight stones (the pot comes with a set of two) to eliminate mold while their unique and very clever sealing system allows fermentation gasses to escape without allowing air to enter the crock pot. Recipes and instructions are included with the purchase of every Harsch Fermenting Crock Pot.

The special cast gutter in the rim and the ceramic cover, which fits into the gutter, is filled with water, which creates an air lock. Gasses caused by the fermentation process can escape but air cannot enter the Harsch Fermenting Crock Pot from the outside. (Sounds like a safe place to hide when one wants to be alone, no?)

In caring for the Harsch Fermenting Crock Pot, the most important thing to remember is to keep it clean, especially the pot and the lid (and this doesn’t mean keeping it away from dirty movies, bad influences, etc). It only needs to be wiped, rinsed off and then left to dry. Mold is never a worry because the stoneware of the Harsch Fermenting Crock Pot absorbs virtually no water. You should however, monitor the evaporation of water in the water groove. The pot must always be sealed tightly in order for it to do its job properly.

It must be said the fermentation process is done in several stages and it is recommended that only people with a high degree of patience operate the Harsch Fermenting Crock Pot. This is because it takes from 4-6 weeks and there is absolutely no peeking especially during the first two to three weeks into the procedure.

By keeping the water groove filled with water during fermentation and storage, air does not come into contact with the vegetable, yeast will not form, which can make the vegetable slimy and the upper portion of the vegetable won’t turn bad. Don’t fill it all the way because the cover stones and the carbon dioxide need room. The Harsch Fermenting Crock Pot should be filled no higher than 4/5 its height.
