A Chopper Extraordinaire
This unique chopping utensil, which means “half moon” in Italian, derives its name from its curved shape, which resembles that of the moon in the midpoint of its cycle. The mezzaluna consists of either a single or a double curved blade with a handle on each end. The double bladed ones are often used for chopping herbs and vegetables and the very large single blade versions are sometimes used or pizza. The mezzaluna blades are very sharp and do their work well, making mince meat of whatever lay underneath: meats, vegetables, hard cheeses and most leafy herbs.There is a proper way to hold the mezzaluna to insure that it does it work effectively and that you end up with as many fingers as you had before you started chopping. Hold the black knobs of the instrument firmly and, with a rolling motion, move the blades over whatever you plan to chop. The process can be a bit like life on the high seas (rough or fine), but whatever you do, don’t throw out the plastic sleeve in which the mezzaluna arrives. It will protect both the blade and your fingers. A durable cutting surface is mandatory for proper use of the mezzaluna chopper. A concave chopping board works best, although they are not so easy to find. (A flat board will work fine with the mezzaluna, but it is an easier process with a concave-shaped one). The dual stainless steel blades are quick and efficient but sometimes food can get caught between the blades. If this happens, do not run your finger in there to push it out, no matter how tempting or easy it may seem to do so. Keep a chopstick nearby. That will do the trick safely as wood is not usually known to bleed. The mezzaluna works best on dryish but not too hard things, like nuts and celery for example. Generally, the wetter the food the more it sticks. It isn’t recommended for children to use at any time (although adults who act as children may use it at the discretion of their spouses and significant-other relatives).So consider the mezzaluna chopper as a fine addition to your kitchen utensils.
