As of 2 days ago I had 3 Hub Pages. Yesterday, I mysteriously only have two although 3 are still being tracked.
Any suggestions as to what might have happened?

Your 3rd hub was flagged as "overly promotional" and unpublished. You can find it on your my account page. It can be published again if you fix the problem. Also, your other two hubs are in danger of being removed as well since they each contain many links promoting a single site.
