Thanks Jason,the term sous vide actually refers to under pressure.like a sous is under the chef. Holding food in a water bath under vacuum pressure at 140F for hours. Funny, because I recently saw it used again on Bravo Chef Masters. Was very unique technique.-James

Yeah, it's oddly spelled given its pronunciation. And we've got some mighty fast fingers in this contest! Yesterday's was hilarious - I think it took oceansnsunsets less than a minute to guess correctly.
