I hear ya! We all need super large kitchens with industrial sized refrigerators and multiple stoves, but only a couple times a year. This year I was reading about thawing turkeys and brining turkeys. Thaw a turkey in the frig 1 day per 3 lbs?! Submerge turkey in a 5 gal bucket in brining solution and refrigerate for 24 hrs!?!? Who has that much frig space? And in San Antonio, we can seldom use our garages for a refrigerator. Certainly can't count on the few episodes of cold to coincide with the holidays.
