Lactation Recipes: Oatmeal Chocolate Chip Lactation Cookies
I was given this recipe by a lactation consultant at the hospital where our preemie daughter is currently in the NICU. Many mothers of preemies have trouble with low milk supply due to long periods of separation from their babies. Your body is missing the natural cues to stimulate milk production, so recipes like this will help your body. Key ingredients in lactation recipes include oats, flax seed, and/or yeast. Enjoy!
- 1 c. butter
- 1 c. sugar
- 1 c. packed brown sugar
- 4 Tbsp. water
- 2 Tbsp. ground flax seed
- 2 eggs
- 1 tsp vanilla
- 2 c. flour
- 1 tsp baking soda
- 1 tsp salt
- 3 c. oats
- 1 c. chocolate chips
- 2-4 Tbsp. brewer's yeast
- Preheat oven to 350 degrees.
- Mix the flax seed and water, let sit for 3-5 minutes.
- Beat butter, sugar, and brown sugar well. Add eggs, mix well. Add flax/water mix and vanilla, beat well. Sift in flour, brewer's yeast, baking soda, and salt. Stir in oats and chocolate chips.
