you have to go into the router setting to do it manually, it is different for every router but the nintendo help page has how to do it for a variety of different routers.

You have to login to the router setup page by using the ip address of the router (Linksys:192.168.1.1, Netgear, Dlink:192.168.0.1, other 192.168.0.254). Then go to wireless settings tab and change the channel.
