Salmon is one of the fatty fish with lots omega 3 fatty acid, the good fat. It is high in protein but low in calories and saturated fats. Salmon with Dill and Lemon Juice
4 salmon fillet
1 Tbsp lemon juice
2 Tbsp chopped fresh dill
½ tsp salt
¼ tsp black pepper
Preheat oven to 450 degrees
Lightly oil a baking sheet or pan.
Mix dill, lemon juice, salt and pepper in a bowl.
Brush both sides of the salmon with the above mixture.
Bake for about 12 minutes until the center of the salmon is almost translucent.
Serve with rice or vegetables or both
Salmon with Tomatoes and Capers
4 salmon fillets.
1 ½ Tbsp olive oil
1 medium sized onion chopped
2 clove garlic minced
1 can diced tomatoes
2 tsp of capers
1 Tbsp lemon juice
2 Tbsp minced parsley
Preheat the oven to 450 degrees.
Heat the oil in a large skillet at medium high heat.
Add the onions and garlic and cook for about 3 minutes until the onions are a bit softened.
Add the tomatoes and capers and simmer stirring occasionally until sauce thickens.
Remove from heat and add the lemon juice and parsley.
Place salmon in a baking pan and spoon the tomato, capers sauce over it,
Cook for 10 to 12 minutes until salmon is almost translucent.
Spiced up Salmon
1 Tbsp olive oil
1/4 tsp ground cayenne
1 tsp of ground cumin
½ tsp of dried thyme
½ tsp of salt
1tsp brown sugar
4 six ounces fillet of salmon
¼ tsp ground cinnamon
Mix the cumin, sugar, thyme, cayenne,cinnamon, salt, together.
Rub the salmon gently with the above spice mixture.
In a large skillet heat the oil over medium high.
Add the salmon with flesh side up.
Cook for about 6 minutes until the salmon is deeply golden and easily lifts off the pan,
Turn and cook for another 6 minutes until the salmon is barely translucent.
