I've had this cake in various forms for the last 40 or more years and it's always delicious. You won't find an easier or more delicious cake recipe anywhere. So what are you waiting on. A 1-2-3-4 Cake is a very simple yellow cake with a simple chocolate sour cream icing. A cake very similar to this is what my Grandmother served on Sunday. She would make a simple yellow cake of one layer and then she would put various icing on the cake depending on what she had on hand. My favorites were chocolate or coconut. I included three different icing recipes for you to choose from below. All three recipes are quick and easy to make.

Let Your Cake Cool Before You Put On The Icing.

Be sure to let your cake cool before you put your icing on the cake. Did you know that your cake will turn out much better if you have all your ingredients at room temperature when you get ready to make your cake. Ingredients that are too cool will cause your cake to crack and break.

Be sure that your baking soda is fresh or your cake may not rise properly. I now use only ground sea salt in my recipes as regular table salt is nowhere near as good for you or as nutritious as sea salt. I also think that sea salt improves the flavor of most recipes. Well lets get back to our 1-2-3-4 cake.

What You Will Need For Your 1-2-3-4 Cake

1. One Teaspoon Ground Sea Salt.

2. Four Large Eggs.

3. Three Teaspoons Baking Powder.

4. Three Cups Plain All Purpose Flour.

5. Two Cups White Granulated Sugar.

6. One Cup Whole Milk.

7. One Cup Real Butter.

I like to make the cake in a spring form pan so I can quite easily take my cake out of the pan easily and have a beautiful cake every time. You also need a large mixing bowl and an electric hand mixer. I always keep Pam (TM ) on hand to use in all my baking. The Pam (TM ) is a high quality vegetable baking spray and it gives your baked goods the best flavor.

You need to use real butter in your cakes for the best flavor. Some people will argue that you need unsalted butter but I don't think it really matters. Again let me caution you to make sure to use only fresh baking powder in your cake. If you don't your cake may not rise properly. Baking Powder or baking soda should never be stored in open. If your baking powder doesn't come with a lid then put your left over baking powder in a small container with a tight fitting lid.

I make this cake quite often. If I'm making it for a large crowd I usually double or triple the recipe and make it in a sheet pan. I often make it in a spring form pan. That way the cake easily comes out of the pan.

When you do baking you're always better off to use the best ingredients you can buy. The no name or store brand items may be cheaper but they will never produce the best product.

Once your cake mixture is very well mixed together spray your cake pan well with vegetable cooking spray and shake the pan to make sure the cake cooks even and level.

Three Icing Recipes You Can Use On Your Cake

Chocolate Sour Cream Icing

1. One Half Cup Sour Cream.

2. One Teaspoon Vanilla Extract.

3. One Cup Semi Sweet Chocolate Chips.

4. Four Tablespoons Butter.

5. One Teaspoon Ground Sea Salt.

6. Three Cups Confectioners Sugar.

Melt your chocolate and butter together. Let it cool and then stir in your sour cream, vanilla, and salt. Gradually add your confectioners sugar until you have it all blended in. You will need your electric hand mixer to make your icing properly. You can now use the chocolate sour cream icing on your cooked cake layer.

Sour Cream Coconut Icing

Here is one of my favorite coconut icings. You will need to serve the cake when finished or store it in the refrigerator.

1. Nine Ounce Carton Of Cool Whip Topping

2. Two Six Ounce Packages Frozen Flake Coconut Thawed.

3. Two Cups White Granulated Sugar.

4. Eight Ounces Sour Cream.

Mix all your ingredients together in a large bowl and beat the ingredients together well with your electric hand mixer. Now your ready to put the coconut icing on your cake.

German Chocolate Icing

1. One Cup White Granulated Sugar.

2. One Cup Evaporated Milk.

3. One Half Cup Real Butter.

4. Three Large Eggs Beaten.

5. One And One Half Cups Fresh Frozen Coconut Thawed.

6. One Cup Pecans Chopped Up Fine.

7. One Teaspoon Vanilla Extract.

In a non stick saucepan combine your butter, eggs, milk, and sugar. Cook over medium heat stirring until the mixture starts to boil. Then remove from the heat and stir in the remainder of your ingredients. Keep stirring until the mixture thickens so it can be spread over your cake.
