Slow cookers or crock pots make it easy to put together a healthy dinner with a short amount of prep time. While the meal will take a while to cook, once you have everything assembled in the pot, you won't have to do much else until it's nearly time to eat. There are a number of great slow cooker dinner recipes that only require 3 ingredients. It doesn't get much more simple than that. Happy cooking!

Slow Cooker Tips

  • Keep an eye on the slow cooker the first time you make a recipe. A recipe will have varying times for different sizes and models of slow cookers. The cook time will also depend on the quantity of food that you are preparing, which may different slightly from the amount given in the recipe. (For example, the recipe may call for 4-6 chicken breasts, and you choose to prepare 2-3 instead.) Check on the food on a regular basis the first time you are preparing a recipe.
  • Do you avoid using your slow cooker because of the clean up required? Consider using a liner. Many slow cookers are large and can be cumbersome to clean. If you hate this process, purchase slow cooker liners. They are inexpensive and make the clean up task so simple.

Pulled Pork

Ingredients:

Pork tenderloin, root beer, barbecue sauce of your choice.

Variations:

You can use your slow cooker to make many different types of pulled sandwiches. Chicken thighs work well. There are also a number of variations for this recipe with different beverages, most notably cola and beer.

What else you'll need to serve dinner:
If you're going to eat pulled pork as sandwiches, you'll need some kind of bun. Pull together a few simple sides, such as a fresh green salad or cut up fruit.

Thai Curry

Ingredients:

2-5 cans on coconut milk, 1-2 chicken breasts or thighs, cut into cubes, 1-3 tablespoons of Mae Ploy curry paste

Variations:

Add vegetables such as onions, carrots, and broccoli or cubed potatoes. If you want a vegan recipe, substitute the vegetables for the chicken.

What else you'll need to serve dinner:
Rice to serve with it. Make this process simple with a rice cooker, minute rice, or a microwave rice bowl. If you opt for potatoes, most likely you don't need the rice.

Chicken With Gravy

Ingredients:

4-6 chicken breasts or thighs, 1 can cream of mushroom soup, 1 packet onion soup mix

Variations:

Add vegetables of your choosing. Substitute the mushroom soup for a different cream soup, such as cream of chicken or celery.

What else you'll need to serve dinner:
This is wonderful served over mashed potatoes, rice, or toast.

Sweet and Tangy Meatballs

Ingredients:

1 package of frozen meatballs, 1 jar chili sauce (12 oz.), 1 jar grape jelly

Variations:

I don't have any...yet, but I'm open to suggestions.

What else you'll need to serve dinner:
Rice or noodles to serve with it.

Chicken Tacos

Ingredients:

5-6 chicken breasts or thighs, 1 envelope taco seasoning (or homemade seasoning), 1 jar of salsa (12 oz.)

Variations:

Switch up the chicken for pork. You can up the spice level by adjusting your homemade seasoning, selecting a spicy store bought variety, or adding extra seasoning. Instead of serving this as tacos, make nachos, enchiladas, burritos, quesadillas, etc.

What else you'll need to serve dinner:
Tortilla and/or taco shells and toppings (i.e. lettuce, sour cream, cheese). This will all come together very quickly when you're ready to eat.

Hawaiian Barbecue Chicken

Ingredients:

4-6 chicken breasts, 1 jar of Hawaiian barbecue sauce (look for the Archer Farms variety at Target), 1 jar of pineapple chunks (20 oz, drained).

Variations:

Try it with pork instead of chicken. Switch up the barbecue sauce if that variety isn't to your liking. Kick up the spice with your own seasonings and/or with a spicy sauce. Add chopped green pepper and onion.

What else you'll need to serve dinner:
Rice to serve with it.

Italian Beef

Ingredients:

3.5 lb cut of beef (shoulder, arm, or chuck roast), 1 packet Italian seasoning dressing mix, 3 beef bouillon cubes. You'll also add a cup of water.

Variations:

Switch up the seasonings.

What else you'll need to serve dinner:
If you're making your beef into sandwiches, you'll need buns or rolls.

Buffalo Ranch Chicken

Ingredients:

4 chicken breasts, 1 envelope ranch salad dressing mix (look for Hidden Valley), 1 bottle Franks buffalo wing sauce (17.5 oz.)

Variations:

If you're serving the chicken breasts whole as an entrée, make sure that they're cooked thoroughly. If you'd like to shred them for sandwiches, cook them until they shred easily with a fork.

What else you'll need to serve dinner:
If you're serving this as an entrée, it pairs well with rice or noodles and a salad or vegetable side. If you're serving this as sandwiches, make sure to pick up some rolls or buns.

i love all these ideas especially since cool weather is around the corner and I don't mind a little heat in the kitchen. I do like putting stuff in a big pot and disappearing for the day and coming home to a house scented with wonderful cooking smells.

Carol, that's great. Adding a little heat to the kitchen in the winter is perfect. Now that I work from home, I love being able to get a slow cooker meal going in the morning or early afternoon and then not think about it again until we're ready to eat.

Variation to meatballs (which I've been making for years and love! Excellent dish to pass for parties (especially super bowl party!). I once forgot the chili sauce so threw in BBQ instead. Turned out to be really good! Though not as good
