3 Too Good To Be True Zucchini Squash Side Dishes

What are you going to do with all that zucchini proliferating in your garden? EAT THEM!

Zucchini Squash Casserole:  6 small zucchini squash, 1 chopped onion, 1 can peeled whole tomatoes, 1 can of yellow corn with 3/4 of the liquid drained, 1 small pkg grated cheddar cheese, salt and pepper to taste, 1 stick margarine

Slice zucchini into disc shapes and place in a large frying pan.

Add margarine, onion and enough water to slightly cover squash.  Cook this on medium-high (7) for 10 minutes.

Add everything else, except cheese.

Cover and cook on low for one hour, stirring occasionally.

Place into serving dish and immediately and cover with cheese.  Serve.

Zucchini Quiche:  2 cups chopped zucchini, 1/2 cup onion, 1/2 cup chopped green pepper, 1 1/2 cups sharp shredded cheddar cheese, 1 1/2 cups milk, 3/4 cups Bisquick Baking mix, 3 whole eggs, 1 tsp salt

Preheat oven to 400 degrees.  Lightly grease pie plate.  Put raw zucchini in 2 cups of boiling water.  Cook until tender (8 minutes or so).

Place zucchini, onion, green pepper and cheese in the greased 9x13 pie plate.

Mix gently.

Mix remaining ingredients in separate bowl.  Mix until smooth.  Pour into pan.

Bake 40 minutes.  Cut and Serve.

Zucchini Pancakes:  5 medium zucchinis, 1/2 tsp salt, 4 eggs beaten, 1 clove minced garlic (I use one tsp from a jar of ready-minced garlic), 3/4 cup all purpose flour, 1/2 cup grated parmesan cheese, 1 TBS chopped onion, black pepper to taste

Trim and shred zucchini.  Toss zucchini with salt.  Wrap in a lint free towel and squeeze.  The zuchinni shoud be as free from its water content as possible. 

In a mixing bowl beat the eggs and garlic together.  Add flour, cheese, onion, pepper, just until the added ingredients are moistened.  This batter will be lumpy.

Lightly grease a skillet and drop 1 TBS of the batter onto the hot surface.  Pat down with a spoon until it's about a 3 inch circle.

Cook over medium (5) heat for bout 3 minutes on each side.  Serve warm.

These freeze well for up to 3 months.  Reheat in an oven.
