A Taste Of Cuba
Cuban food is a mixture of Spanish, African, and Caribbean cuisine. Cuba shares the spices of Spain and Africa and this results in earthy rich tasty foods that almost everyone loves. Rice and beans are an important part of the Cuban Cuisine and it was from Cuba that New Orleans Red Beans and Rice came from.
In Cuba the traditional Cuban bread is made into delicious sandwiches. Though Cuban bread is not available every where French Bread is very similar. In Cuba and much of southern Florida plantains are cooked and served as a dessert and as a main course. You'll find African influences with the plantains cooked with butter, rum, and brown sugar.
The Spanish Chorizo Sausage is also very popular in Cuba and south Florida and there you'll find the sausage fried mixed with eggs and made into sandwiches on Cuban bread with mayonnaise and cheese.
Cuban Coconut Chicken
I use skinned and boned chicken thighs to make this recipe with.
Ingredients For Cuban Coconut Chicken
1. Six Skinned, Boneless Chicken Thighs.
2. One Tablespoon Vegetable Oil.
3. One Large Sweet Onion Chopped Fine.
4. One Fourth Cup Red Bell Pepper Chopped Fine.
5. One Fourth Cup Green Bell Pepper Chopped Fine.
6. One Tablespoon Minced Fresh Garlic.
7. One Fourteen Ounce Can Coconut Milk.
8. One Level Teaspoon Cayenne Pepper.
9. Salt And Pepper To Taste.
In a large skillet in the vegetable oil fry the chicken thighs until brown on both sides. Once the chicken is brown on both sides you'll want to stir the peppers and onions into the pan and cook until the onions and peppers are done. Now stir in the coconut milk and garlic and cook until the liquid reduces.
Cook yellow rice and then put the rice in the bottom of a casserole dish. Pour the chicken and vegetables out on top of the rice and then wrap the casserole dish with tin foil. Bake the casserole dish for about 40 minutes at 350 degrees and then take the casserole dish out of the oven. This recipe is oh so tasty and my family has been making it for a number of years. You'll find that the chicken will be oh so delicious and tender.
You will also find patties made of Chorizo Sausage and Ground Beef and then it is formed into patties and cooked until done. Onions and Jalapeno Pepper slices are cooked in a skillet with butter and the hamburger and sausage patties are place on sliced open Cuban bread and the cooked onions and jalapenos are put on top of the meat patties and then the Cuban bread sandwiches are fried in butter in a pan until the bread is toasty brown on each side. It's a very popular sandwich in south Florida where it's most often served at breakfast.
I've lived and worked in Key West for a large portion of my life and I love the foods of Cuba. The Spanish influences give you flavors that are rich, earthy, and wonderful. I grew up eating Cuban Pork Sandwiches and I just simply love them. We used to cook a large pork butt just to use in making Cuban Pork Sandwiches and I've kept up this family tradition for many years.
Be sure that you trim any excess fat off your pork butt before you cook it to make sure you end up with a delicious cooked pork butt when you finish cooking it. Some people like to use a bone in pork butt but I've always used boneless and trimmed it up well to make a cooked pork butt that I can easily slice with an electric knife.
The best way to cook a pork roast for Cuban Pork Sandwiches is to keep your roast pork butt simple by spreading olive oil, fresh ground rosemary, salt, pepper, and ground cayenne pepper all over it and then bake it covered in a pan in the oven until it reaches an internal temperature of 160 degrees. We always trimmed up our pork butt of any extra fat especially if we were going to be slicing it for sandwiches. I use an electric knife and I slice the boneless pork butt once it's cooked very thin so I can freeze part of the sliced pork roast up and freeze it between layers of wax paper. That way I can quickly put together Cuban Pork Sandwiches when ever I like.
CUBAN PORK SANDWICHES INGREDIENTS
1. Four White Hamburger Buns
2. Two Tablespoons Of Brown Mustard.
3. Four Teaspoons Of Mayonnaise.
4. Eight Slices Thin Sliced Roast Pork Butt.
5. Eight Slices Thin Sliced Boiled Ham.
6. Eight Slices Thin Sliced Swiss Cheese.
7. Twelve Slices Dill Pickles.
8. Four Tablespoons Butter Melted.
To put your sandwiches together spread one side of the buns with the mustard and the other side with mayonnaise. Layer sliced pork, ham, and 3 pickle slices on each sandwich.
Fold your meat so it all fits inside the sandwich and firmly press the sandwich together with your hands.
Heat the butter in the skillet and place the sandwiches in the skillet in the butter. Cook the sandwiches turning them over when one side is brown to brown the other side and wrap the sandwiches in wax paper to serve the sandwiches like in the photo above. I guarantee you that you'll have a sandwich that will be crusty and delicious and almost everyone loves them. I know I do. CUBAN BLACK BEAN SOUP
Here's a hearty delicious soup that I've enjoyed for years. It's also good for you. And delicious when served with the Cuban Pork Sandwiches.
Ingredients For Cuban Black Bean Soup
1. One Pound Black Beans Sorted And Rinsed.
2. Two Tablespoons Vegetable Oil.
3. One Large Sweet Onion Diced Fine.
4. One Tablespoon Minced Fresh Garlic.
5. One Cup Diced Boiled Ham.
6. Three Cups Beef Broth.
7. One Fourth Cup Apple Cider.
8. One Tablespoon Cumin.
9. One Teaspoon Dried Oregano.
10. One Half Cup Diced Bell Pepper.
Wash your dry black beans and go through them carefully to make sure you don't have any rocks. Sauté your onion and garlic in a skillet until done but not browned or burnt.
Put all your ingredients into a large slow cooker or crock pot and cook for six hours on high. Stir several times while the beans are cooking.
Once the beans are done you can serve them in individual small bowls along with your Cuban Pork Sandwiches and garnish the top of each bowl of beans with fine chopped hard boiled eggs and diced green onions including the tops. In Cuba the black beans are always served garnished with the chopped hard boiled eggs and the diced green onions. You won't find a much better bowl of beans than these.
Cuban Fruit Salad
This salad makes a lot of salad but it's delicious and goes perfect with the Cuban Pork Sandwiches and the Cuban Black Beans. You can make it the day before and keep it in the refrigerator in a plastic container with lid until your ready to serve it.
INGREDIENTS FOR CUBAN FRUIT SALAD
1. Four Cups Watermelon With The Seeds Removed And Cut Up In Small Pieces.
2. One Cup Fresh Pineapple Cut Up In Small Pieces.
3. Four Cups Strawberries Hulled And Cut Up In Small Pieces.
4. One Cup Kiwi Fruit Peeled And Cut Up In Small Pieces.
5. Four Cups Seedless Grapes.
6. Two Cups Bananas Peeled And Cut Up In Small Pieces.
Put all your fruit into a large plastic container that you have a lid for and set aside.
In a saucepan heat one cup sugar, one cup lime juice, and one cup water until it is boiling and then turn the heat off. Let it set until it comes back to room temperature and then pour it into your fruit and stir it up to coat your fruit. Have a half cup of mixed half and half orange zest and lime zest and once you have the syrup mixed in the fruit mix in the citrus zest and stir well. Put the lid on the container and put it into the refrigerator to chill until very cold. This is one of the best fruit salads you will ever eat.
