A few ways to enjoy jicama

Jicama, a root vegatable; it is sweet and looks like a turnip and has been culivated in South American for centuries. Jicama is quite popular in Mexican menu and it's unqiue taste can be used in salsas, salads and different raw receipes such as jicama fries and a refreshing surprize to a vegtable platters.

Here are a few receipes to enjoy jicama

Spicy Jicama Fries

(Will make 4 cups)

½ teaspoon of seal salt

½ - ¾ chilli powder

1/8 teaspoon ground cumin

2 tablespoons of lime juice

1 teaspoon of olive oil

Mix together then add:

4 cups of jicama (peeled, cut in ¼ - ½ “ strip like French fries)

Stir jicama and mixture gently together

Ready to be served right away, or chill fries for 30 minutes for an extra crisp taste.

 

 

Spicy jicama pineapple salsa

 

2 tablespoons of olive oil

1 – 2 green onions

6 cloves of garlic ( finely minced)

½ - ¾ cups of fresh pineapple (diced)

½ - ¾ cups each of red and yellow peppers (seeded and diced)

½ cup of jicama (peeled and finely chopped)

1 tablespoon chipotle chillies (finely minced) or chili flakes or jalapeno

¼ cup of fresh lime juice

¼ teaspoon of sea salt

½ cup of fresh cilantro or parsley (chopped)

Mix together and I like to keep in the refrigerator until ready to be served and this salsa stays fresh for week.

Jicama Cheddar Salad with Lime Dressing

(Will make 4 servings)

1 medium jicama (peeled and cut into matchsticks, ¼” – ½” strips)

3 medium carrots (cut into matchsticks, ¼ - ½” strips)

½ small red onion (optional)

¼ cup fresh lime juice

2 teaspoons of agave

¼ teaspoon of sea salt

½ teaspoon of ground cumin

1/3 cup coarsely chopped fresh cilantro or parsley (minced)

4 ounces of reduced fat cheddar cheese (grated)

In a large bowl mix together lime juice, honey, salt and cumin.

Add jicama, carrot and cilantro and gently mix together

Add shredded cheese on top and a ½ of a small avocado, (peeled and diced – optional)
