Step by Step on Making Awesome Eggplant Parmesan

Ingredients

3-Medium eggplants

3-Cups of Italian style Bread crumbs

3-eggs Beaten

1-Can of tomato sauce (16 ounces)

Salt and black pepper

Vegetable oil (Cup)

1-Lb Grated mozzarella Cheese

½ -Lb sliced mild Provolone

¼ Cup of milk

Preparing the Eggplant

First peel all of the eggplants and cut both ends off And Slice into round pieces, then take the Eggs and Beat Them, and add salt and pepper, and milk to the Beaten eggs, Then Dip your Eggplant into the beaten Eggs, then In the Bread crumbs on both sides, and Shake off any Excess.

You’ll want to preheat your Vegetable oil in a Large Frying pan until its hot, not To hot Tip (always Wait Until you oil is hot other Wise the eggplant will Absorb the oil and come out Soggy and not crispy) And cook on both sides until Golden brown, and place Them on a Brown paper bag Until ready to Assemble In Baking pan.

Tip (you will Have to change the oil a Few times this Will Insure that all of your eggplant Will Taste good And Not Burnt from the old oil) once All your Eggplant is Cooked,your ready to Assemble.

Assembling your Eggplant for Baking

Now you’re ready to assemble/Layer your cooked eggplant, in a Baking Pan tip (Make sure you put a good Layer of Sauce On the bottom of The baking pan, this will Insure that The eggplant will Not Burn).

Next step is preheat your oven to 350 degrees and Start Layer your fried eggplant on top of The sauce.

Then a layer of mozzarella and provolone, on top of That Until you have Used up all your Eggplant, then Use About ¼ cup of Grated cheese and some more Mozzarella for the Final Topping.

And baked for about 30 to 40 minutes until the top is A golden brown color. I like to serve On Nice fresh Bread, or use it as a side dish or put on top of Some Pasta and your Family and Friends will love it. Enjoy
