Afghanistan Style Meat and Vegetable Soup

I had a lot of fun making and eating this dish. It makes me wonder if our soldiers in Afghanistan has tried it. It is simple to make and all you need is:

1 pound of ground beef

¼ cup of butter

1 large onion chopped

1 clove of garlic chopped

1 green pepper minced

1 cup can tomatoes

1 teaspoon of salt

¼ teaspoon of red pepper

1 cup of water

¼ pound of egg noodles

4 cups boiling water

1 cup kidney beans

1 cup cooked dried peas

1 cup of yogurt

A few mint leaves

This is more simple than it sounds. Brown the ground beef in melted butter and then add onion, garlic, green pepper, tomatoes, salt, and the red pepper. Add one cup of water and mix well.. Pour into a one quart casserole and bake in a slow oven at 325 degrees for one hour. Remove from oven and stir.

Next boil the noodles in the boiling water for tn mites. Add salt, pepper, beans and peas. Remove from heat and add in yogurt. Mix well. The soup should be about the same consistency as Camp bell's Vegetable Soup and if it is too thick just add water. Add meat mixture to soup, stir, and serve in soup bowls. Garnish with dry mint.

this is one recipe I am going to use soon. This sounds delicious! but I will use tofu instead of ground meat. can break the tofu up in to tiny pieces, then fry as you said with the other ingredients and follow recipe as usual.
