More Information About The Alabama Lane Cake

The original Lane Cake was made by Emma Rylander Lane of Clayton Alabama. The cake was first called the Prize Cake by Emma because she won first place for the cake in the Alabama State Fair. The name of the cake was later changed to reflect the ownership of the original recipe by Emma Lane. The recipe for the cake was first published in a cookbook published by Emma Lane in 1898.

The Alabama Lane Cake was mentioned in the novel , " To Kill A Mockingbird " and later in the movie , " To Kill A Mockingbird ". The Alabama Lane Cake has been made all over the American deep south and it is quite popular in some areas of the south.

It is a very popular cake at some restaurants along the Gulf Coast and you'll find the cake made many different ways.

And yes if you want to make the cake with out the bourbon you can. But it won't have the wonderful flavor it will with it.

The Seven Minute Frosting is a very popular frosting and is used on various types of cake. You need to beat the frosting with your hand mixer the whole time it is cooking or it won't work right. And don't add your vanilla extract until you remove the frosting from the heat. Once you learn how to make this delicious frosting you can make it and use it on all kinds of other delicious cakes.

Don't be afraid to make this cake as it isn't really that hard to make. Just follow the directions and you'll be able to make the cake quickly and easily. Be sure that you let your cake layers cool completely on the wire rack before you try to put your cake together. If you try to use warm cake layers your cake won't go together right.

Southerners love to cook this cake for big events and some people split their cake layers and have six layers instead of three layers. Alabama Lane Cake Recipe

With our recipe here for Alabama Lane Cake we are going to use a cherry filling that does two things. It makes the cake oh so delicious and it is so beautiful on the cake.

Equipment Needed To Make Your Cake

1. Electric Hand Mixer.

2. Three Nine Inch Cake Pans.

3. Wire Cooling Racks.

4. Heavy Non Stick Saucepan.

5. Double Boiler.

Be sure to save your eight yolks once you separate the eggs as you'll use the egg yolks in the cherry filling.

You will want to get the red out of your cherries by pressing your cherries between layers of paper towels to get all the red you can out of the cherries so the red won't get on your white frosting.

The frosting used on this cake is the traditional seven minute frosting that has to be cooked for seven minutes in a double boiler while you beat it with a hand mixer for the entire seven minutes.

Alabama Lane Cake

1. One Cup Butter Softened.

2. Two Cups White Granulated Sugar.

3. Three And One Fourth Cups Of Sifted Cake Flour.

4. One Tablespoon Of Baking Powder.

5. One Level Teaspoon Ground Sea Salt.

6. One Half Cup Half And Half Cream.

7. One And A Half Teaspoons Vanilla Extract.

8. Eight Egg Whites.

Beat your butter with electric hand mixer until it is creamy. Gradually add the sugar being sure to beat it into the butter well. Now you'll want to add the flour, baking powder, and the salt. Add your milk and half & half and add your vanilla extract.

Now beat your egg whites at high speed with your hand mixer until stiff peaks form. Now fold your egg whites into the cake batter and mix up well. You will want to spray your three cake pans with vegetable cooking spray and then add a tablespoon of cake flour to each cake pan and shake it around and then pour it out tapping the cake pan on the bottom to dislodge any excess flour. Now you can divide your cake batter between the three cake pans.

You will want to bake at 375 degrees for 20 minutes or until a wooden toothpick inserted in the center of your cake comes out clean. Let your cake layers cool in the pans for ten minutes and then remove them from the pans and let them cool completely on your wire racks.

Cherry Filling For Your Alabama Lane Cake

1. One Half Cup Maraschino Cherries Sliced In Half.

2. One And One Fourth Cups Of Sugar.

3. One Half Cup Of Butter.

4. Eight Egg Yolks Beaten.

5. One Cup Fine Chopped Pecans.

6. One Cup Raisins.

7. One Cup Frozen Coconut Thawed.

8. One Fourth Cup Of Bourbon.

Press your cherries between paper towels to remove excess moisture and set aside. Combine sugar, butter, and egg yolks in a heavy saucepan. Cook over medium heat, stirring constantly, for 20 minutes or until the butter melts and mixture is very thick. Stir in the cherries, pecans, and remaining ingredients. Let it cool completely.

Seven Minute Frosting

1. Three Fourths Of A Cup Of Sugar.

2. Two Tablespoons Plus Two Teaspoons Of Water.

3. One Egg White.

4. One And A Half Teaspoons Light Corn Syrup.

5. One Level Teaspoon Ground Sea Salt.

6. One Half Teaspoon Vanilla Extract.

You want to combine your first five ingredients in the top of a double boiler and beat at low speed with your electric hand mixer until the ingredients are just blended. Place the frosting over boiling water and beat constantly for seven minutes until stiff peaks form. Remove from the heat and beat in your vanilla extract. You will want to spread immediately.

Spread your cherry filling between layers and on top of your cake. Spread your frosting on the sides of the cake. Place your cake on a cake pan with a lid and keep your cake in the refrigerator. This cake is one of the best things you will ever eat. It is so delicious.

The cake in the picture above does not have cherries added to it but I think it is best with the cherries added to it.
