How to make the Anchovies at the Lemon taste

Ingredients

  • For 4people:
  • 16 anchovies,
  • 2 lemon or white wine vinegar,
  • 2 fresh onions,
  • parsley,
  • olive oil,
  • salt

Preparation

Clean anchovies unfolding with your hands on the side of the belly.
Remove the head and the central bone,wash them thoroughly and dry them
with kitchen paper.
Aligned fillets in a baking pan, just salt them and cover with plenty of
lemon juice or filtered with white vinegar if you prefer.
Let marinate for a day in a cool place.
Drain the anchovies from the marinade, arrange them in the dish, cover them
of chopped parsley and spring onions sliced as veil.
Sprinkle with oil and serve immediately.
