If you have one, where does your juicer live? If like me, it probably lives up in the cupboard gathering dust........however every now and again I go through phases of pulling it down, dusting it off, and giving it a good wash and cranking it up!

I am always glad when I do.....its such a great way to use fruit and vegetables creatively, I love the variety with which you can mix and combine and use both veggies and fruit together.

This juice combines apple, ginger and courgette (Zucchini), 3 simple ingredients but the taste is unexpectantly zingy and the colour when combined together is a lovely green hue, to top it all off its packed with vitamin C. This comes from a fantastic juicing book called Squeezed.

You may worry about juicing about the mess, but if you choose a juicer that has a separate compartment for the pith then its easy to take out and clean.

Now you see theres no excuses - get your juicer down and start juicing!

Prep time: 8 min
Ready in: 8 min
Yields: 2 large glasses

Ingredients

  • 4 apples, cored and chopped
  • 2 small courgettes / zucchini, chopped
  • 1.5 inch Ginger, peeled

Instructions

  1. Pop glasses in fridge to cool,
  2. Prepare vegetables as above.
  3. Juice vegetables.
  4. Serve and enjoy - its that simple.
