Apple chicken

Nothing could be easier than this quickly assembled chicken casserole. And you'll be amazed at the way the flavour of the cider or apple juice permeates the vegetables, particularly the potatoes. All root vegetables are rich in fibre and a range of vitamins, and the bay leaves contain volatile oils, which help the digestion. (Serves 4)

New potatoes: in their jackets 225g

Other root vegetables: 450g, peeled and cubed

Chicken: 1, weighing about 1.3kg, excess fat removed, but left whole

Apple juice or cider: to half cover the chicken , about 1 litre

Bay leaves: 3

Put the potatoes and other vegetables into a large casserole / Place the chicken on top / Pour over the apple juice or cider and add the bay leaves / Cook, covered, for 2 hours at 220 degrees celcius/425 degrees fahrenheit/gas mark 7 / Take the chicken out and remove the skin / Pull off the bone into manageable pieces - it will be too tender to carve / Serve with the vegetables and sauce spooned over the top and sides.
