Apple of Your Eye Cheesecake

Hello, Apple Cheesecake. So glad to meet you.

I first "met" Apple of Your Eye Cheesecake at a small gathering with a few smatterings of desserts. I can't say it was love at first sight, though indeed it looked good. But, to be honest I just wanted something sweet, because craving sweets is a weakness of mine. I had no idea what I was getting myself into until I took my first bite.

Now let me say, I value a good Apple Crisp, but in general I tend to lean more toward chocolate desserts of sorts. If I'm at Cheesecake Factory, you'll find me erring on the side of chocolate over fruits.

And yet, the day my taste buds became overwhelmed with this Apple Cheesecake, my life changed. Or at the very least, my kitchen did. You see I went out and bought a very essential tool: a spring form pan. I had come across various cheesecake recipes over the years, but never attempted them because I didn't have a pan like this. But, when my kind neighbor introduced and shared this recipe with me, I knew a spring form pan was worth it. Totally worth it. I bought. I made (with ease). I ate. And it was very good. Now it's your turn.

My only regret is that I don't have my very own picture to share and entice you. But alas, I don't snap pictures of every meal or dessert I make. And, I'm not whipping one up anytime soon, though I kind of want to after all this Apple-of-your-Eye-Cheesecake-talk. But, my husband is making some admirably good health choices right now including not eating sweets. I'm trying to live vicariously through him, which means I eat sweets when he's not looking. But making and gracing my kitchen with this cheesecake right now so that I could snap a picture for you? Well, that just doesn't seem right. But keeping this little gem of a recipe a secret because I don't have a beautiful picture to inspire you seems a bit selfish too.

So take my WORD for it, go make it and eat it. ASAP.

Prep time: 15 min
Cook time: 1 hour 10 min
Ready in: 1 hour 25 min
Yields: Approximately 12 servings


  • 1 cup graham cracker crumbs
  • 3 Tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter
  • 2 Tablespoons chopped pecans
  • 3 8oz packages of cream cheese
  • 3/4 cup sugar
  • 3 eggs
  • 3/4 teaspoon vanilla
  • 2 1/2 cups chopped apples
  • 1 teaspoon lemon juice
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 6 Tablespoons caramel ice cream topping
  • 2 Tablespoons pecans


  1. Combine first 5 ingredients (Crust: 1 cup graham cracker crumbs, 3 T. sugar, 1/2 t. cinnamon, 1/4 cup butter, 2 T. chopped pecans). Pressing into bottom of lightly greased 9 inch spring form pan. Bake at 350 degrees for 10 minutes.
  2. In mixing bowl, beat cream cheese and 3/4 cup of sugar until smooth. Add eggs and beat on low until combined. Stir in vanilla. Pour over baked crust.
  3. Toss chopped apples with lemon juice, 1/4 cup of sugar, and 1/2 teaspoon of cinnamon. Spoon apple mixture over filling. Bake at 350 degrees for 55-60 minutes, until center is almost set.
  4. Cool a bit and then drizzle with 4 Tablespoons of caramel topping. After one hour of cooling, remove sides of pan.
  5. Just before serving, drizzle with remaining 2 Tablespoons of caramel topping and sprinkle pecans on top. Whipping cream optional.
  6. Store in refrigerator.

That picture threw my palate salivation into overdrive. Thanks for the great hub, Ashlea! I'll definitely have to add this to my list of recipes to make soon. With a now 2 month old son, I'm not so sure that he is ready for this cheesecake, but, with his sweet-tooth, I guarantee my husband would love it! -- DIYmommy
