Asparagus tart

The star of this simple tart is asparagus, a gourmet delicacy in many parts of the world. Apart from tasting divine, it can help relieve urinary infections, constipation, arthritis, rheumatism and water retention. (Serves 4-6)

Unsalted butter: for greasing

Ready-made puff pastry: 500g

Fine asparagus spears: 20-30, depending on thickness

Eggs: 2 medium, plus 1 extra yolk

Mascarpone cheese: 300g

Fresh dill or fond fennel: 3 tablespoons finely chopped herb, plus about 6 complete fronds to garnish

Celeriac: 1 medium root, cubed, boiled and mashed with 2 carrots, peeled sliced and boiled.

Mixed leaf salad with vinaigrette dressing: to serve

Lightly grease a 28*20cm or 28cm diameter loose-bottomed flan tin / Roll out the pastry to fit / Arrange the asparagus spears attractively on the pastry / Whisk together the eggs and mascarpone / Stir in the dill or fennel / Pour the mixture over the asparagus / Bake at 200 degrees celcius/400 degrees fahrenheit/gas mark 6 for 30 minutes / Garnish with the herb fronds and serve with the celeriac and carrot mash and salad.

This tart is delicious hot or cold makes a great lunchtime snack.
