Asparagus Stir Fry

 Many people don't know, but it takes three years for a good harvest of asparagus once it's been planted, but oh to me it's worth the weight! Luckily we can find fresh asparagus in our produce section every spring at your local food market. Asparagus is distinctively delicious and a nutritional powerhouse, weather your roasting or grilling them with a little olive oil and fresh garlic this little trick will bring out the bold flavor and sweetness, or just steam them and top with a squirt of lemon and freshly ground black pepper you will enjoy. Asparagus can be used as a simple side dish or as the basis for a soup or even a beer battered appetizer, asparagus always seems a treat to enjoy.

Asparagus Stir Fry

 1 tablespoon of sesame oil

1 tablespoon of canola or vegetable oil

1/4 pound of carrots sliced into thin rounds

1/4 pound of medium yellow onions sliced into half moons

1/4 each of red and yellow peppers, cut into very thin strips

1 teaspoon of minced ginger

4 ounces of button mushrooms sliced

4 ounces canned bamboo shoots drained

1 pound of asparagus trimmed and sliced into 3 inch pieces

The Sauce

3 tablespoons of tamari

1 tablespoon rice wine vinegar

1 tablespoon of honey

1/4 teaspoon of crushed red peppers flakes

1/2 teaspoon toasted sesame seeds

Whisk the sauce ingredients in a small bowl and set aside.

Methods

In a wok or large skillet, heat the sesame seeds and canola oil over a medium-high heat.Saute the carrots and onions for 2 minutes, then add garlic, ginger and peppers and saute for another 2 minutes, Add the mushrooms, bamboo shoots and asparagus and continue to saute for another 2-3 minutes until the asparagus is just beginning to get tender. add sauce and toss well with the vegetable and heat through. Serve warm over steam rice and enjoy.
