Baked Spicy Tofu & Sweet Potato: Recipe
Baked Tofu
Tofu is one of our regular foods, that is a food that we eat 3 to 4 times per month as a main course. I enjoy baked tofu, tofu stir fry and even have a tofu lasagna recipe which I will share in a later hub.
Except for the lasagna tofu, I prefer to use a firm tofu so that it can be diced or sliced according to the recipe.
By itself, tofu has a rather bland taste but when seasoned properly or marinated it comes alive. I love hot sauces, not the so hot I swear my tongue is going to melt kind, but hot enough to clear my sinuses which can come in handy during the winter months.
There is a ground fresh chili paste that I like to coat the tofu with about 2 hours before baking. It is hot so I only use enough to part some flavour and add more when I sit down to eat.
Spicy Baked Tofu & Sweet potato
Ingredients:
1 block firm tofu
1 large sweet potato
Hot sauce to taste
Preparation;
Use hot sauce to marinate the tofu, apply according to your heat preference.
Put in fridge for 2 hours before cooking.
Pre-heat oven to 400F.

This dish can be served with a green salad or a steamed green vegetable such as beans. The dish will serve two, simply slice the sweet potato in half and share. This dish is simple to prepare and to save time you can always prepare the tofu the night before and leave in the fridge overnight.
