If you've ever been lucky enough to have been somewhere around Colombia South Carolina then you just may have had the chance to taste what has come to known as Colombia Gold. No not that kind of Colombia Gold. This Colombia Gold is a rich tasty mustard based barbecue sauce that can quickly convince you that you just may have discovered the worlds best barbecue sauce.
And while were all familiar with all the thick , sweet , tangy , and spicy barbecue sauces that line supermarket shelf's there is so much more to barbecue sauce than that. And there is nothing that can replace a rich delicious homemade barbecue sauce.
One day while visiting Newberry South Carolina I discovered Colombia Gold. And to say the least I was hooked. Colombia Gold has a sweet tangy flavor and it works great on pulled pork , pork sandwiches or chicken. That day in Newberry we had it on grilled chicken leg quarters and I thought it was one of the the most delicious tastiest things I ever ate. Below is the recipe for Colombia Gold.
1. 4 Cups Yellow Mustard.
2. 2 Cups Molasses.
3. 1 Cup Apple Cider Vinegar.
4. 1 Cup Honey.
5. 4 Tablespoons Vegetable Oil.
6. 1 Teaspoon Dried Oregano.
7. 1 Teaspoon Ground Cayenne Pepper.
8. 1 Teaspoon Thyme.
9. 1 Teaspoon Black Pepper.
10. 2 Cups Chicken Stock.
Put all your ingredients into a large stock pot and cook for two hours over low heat stirring often. Let it cool to room temperature and you can store in a covered plastic container. If your barbecue sauce gets to thick add a little water. The cooking time is what makes this barbecue sauce so cook it on low heat until thick and delicious.
If you want to make excellent grilled chicken I suggest you start out by marinading your chicken leg quarters in Italian Dressing for at least 4 hours. Then wash your chicken off and spray with vegetable cooking spray well on both sides and place onto a pre-heated grill. You want your chicken to be almost done before you brush on the barbecue sauce. Save part of your Colombia Gold Barbecue Sauce to serve on the side.
You can also make very good pulled chicken barbecue by grilling your chicken until done and then take a fork and pull all your chicken off the bone. Place your pulled chicken meat into a large plastic bowl and add Colombia Gold Barbecue Sauce to taste.
And I guarantee you that you'll be saying wow! and you just may find that you love this mustard based barbecue sauce.
Beef brisket needs to be cooked over very low heat and it must be cooked slow. If you can cook it low and slow then you can produce a beef brisket that will have you and your guests wanting more and more.
You can really cook a great beef brisket in a smoker where you have low heat and you really need a pan of water in your smoker to produce a moist heat that will produce a delicious and tasty beef brisket.
How You Carve Your Beef Brisket Is Very Important.
Carving your beef brisket is very important also. Be sure when you carve it that you cut across the grain. You should carve all beef like this but especially beef brisket. You can even cook a beef brisket in your home oven but it must be cooked slow over very low heat.
If you do cook your beef brisket in your home oven cook it at 300-325 degrees and cook it covered with water added to the pan at least for the first couple of hours. Sliced beef brisket with homemade mashed potatoes and brown gravy is oh so delicious.
If you want to cook potatoes and carrots with your beef brisket add them in the last 45 minutes of your cooking time.

Texas Barbecue Sauce
Here I'm giving you a recipe for Texas Barbecue Sauce. And traditional Texas Barbecue Sauce is a spicy and sweet mixture of vegetables , spices and tomatoes. And while it takes a little more time to make a Texas Barbecue Sauce I guarantee you that the reward of tasting this wonderful barbecue sauce is well worth the effort. This Texas Barbecue Sauce is great on almost anything but especially beef brisket or sausages. Have you ever had barbecue sauce on something like feta and spinach sausage links. Try it and serve it up on a bun with some good brown mustard and grilled onions and peppers.Or if its available in your area try this Texas Barbecue Sauce on Andouille Sausage. Grill your Andouille Sausage and serve spread with your Texas Barbecue Sauce and grilled onions , peppers and mushrooms. Oh man its so good you'll never forget it. Be sure to toss your sliced onions , sliced green bell peppers and thin sliced mushrooms with Italian Dressing and then grill on a flat grill with real butter.

This sauce is great on beef brisket but you have to keep in mind if your going to cook great beef brisket it must be cooked slow for 6-8 hours over low heat. Now here's the recipe for Texas Barbecue Sauce.
You will need.
1. 4 Cups Water.
2. 4 Cups Ketchup.
3. 2 Cups Apple Cider Vinegar.
4. 1 Cup Real Butter.
5. 1 Cup Sweet Onion Diced Very Fine.
6. 4 Sticks Celery Diced Fine.
7. 1/2 Cup Worcestershire Sauce.
8. 4 Tablespoons Yellow Mustard.
9. 1/2 Cup Honey.
10. 1/4 Cup Minced Fresh Garlic.
11. 2 Tablespoons Paprika.
12. 2 Tablespoons Cayenne Pepper.
13. 1 Teaspoon Ground Sea Salt.
14. 1 Teaspoon Black Pepper.
Add all of the above ingredients to a large stock pot and you want to cook over low heat for at least two hours. You want all your ingredients to blend and come together. You can store your sauce covered in the refrigerator for two weeks.
