I know it may not seem like it with all that snow and bad weather outside but it really will soon be warm weather again and it will be time to once again pursue that favorite American pastime grilling out. And believe me the secret of a great barbecue is in the sauce, Yes the sauce is the secret to a wonderful barbecue. That and the meat is going to be your most important decision when you are preparing for and doing a barbecue. That sauce that comes in bottles at the grocery store is okay but to me it has no soul so I create my own. And over the years I have served these sauces to tens of thousands of people.
And since BBQ Ribs seem to be the favorite of a lot of people I am going to teach you how I make my World Famous BBQ Ribs ( Pork Ribs Incidentally ). With these ribs we usually prepare a half rack per person. You will want regular raw pork ribs or even a large pack of Pork Country Style Ribs being sold in most Super Markets.
You will need a large pot to start with and also nows a good time to get your charcoal grill going so you can finish up your ribs here in a bit.
Place your ribs in a large pot and just cover with water. To the pot after you add the water add 1 Tablespoon Table Salt, 1 Tablespoon Of Black Pepper, 1 Cup of Apple Cider Vinegar and one large apple of any type cut in half. Cook on medium to low high for 1 hour after the pot comes to a boil.
By this time your grill should be ready to cook on and you want to drain your ribs and discard the apple.
World Famous BBQ Rib Sauce
1 Gallon of Ketchup
2 Cups Light Brown Sugar
1/4 Cup of Worcestershire Sauce
2 Tablespoons Fine Ground Cayenne Pepper
1 Tablespoon Table Salt
1 Tablespoon Black Pepper
1 Cup Of Apple Cider Vinegar
1/4 Cup Fresh Fine Chopped Rosemary or 2 Tablespoons Dry Rosemary
You can make this sauce with all or none of the cayenne pepper but try it with all the cayenne pepper the first time because with it on pork ribs this sauce is wonderful.
Place all your ingredients in a large pot and slowly heat up stirring often. Bring to a boil and then reduce heat to low simmer for one hour. Carry out to the grill and get ready to cook the best ribs you will ever eat.
You will want to purchase for your grilling activities 2-3 1/2 inch and 2-3 1 inch regular paint brushes to use on your ribs. With a permanent marker write kitchen on the wooden handles of your brushes so they won't get used some where else. With these brushes your going to paint the BBQ sauce on your ribs.
Place your ribs on the grill and paint them with the BBQ sauce. As you turn them over each time paint them with the BBQ sauce. Your ribs will be done when the bones pull easily from the ribs. Keep a spray bottle of water handy in case you need to put out a little fire. And now you should be ready to enjoy my World Famous BBQ Ribs. World Famous Cole Slaw
This is my recipe that I have served to tens of thousands over the years. I developed this slaw recipe for my World Famous BBQ Ribs but it is really good with almost any BBQ item.
You will need for this recipe
1 Cabbage Head with outer leafs removed and the cabbage chopped fine in the food processor.
1 Green Bell Pepper and 1 Red Bell Pepper cleaned and chopped fine.
1 Large Purple Sweet Onion Chopped Very Fine.
2 Peeled Carrots Chopped Very Fine.
Do all your veggies in the food processor so they are all finely chopped. Put all your veggies in a large bowl with the cabbage. Then make the below dressing for the slaw.
Slaw Dressing
1 Cup Of White Sugar
1 Teaspoon Salt
2/3 Cup Regular Vegetable Oil
1 Teaspoon Dry Mustard
1 Teaspoon Celery Seed
1 Cup Of Apple Cider Vinegar
Mix all your ingredients together well with a whisk. Then pour over your cabbage and veggies and mix it up very well. You want to refrigerate this slaw over night if possible.
