With winter still coming on strong I try to make things for my family that will warm us up as we come inside from this cold, cold weather, and one of the things I do is make a nice tasty pot of soup.
To me soup is a complete meal everything wrapped up in one great bowl, and if you add a nice crisp salad you really have the total package of great eating. My love for good healthy soups comes from my mother and this soup recipe is one of the one my mother use to make, Barley and Mushrooms, They are great together plus very healthy and with a little carrots and a nice simple chicken stock to complement the barley and mushrooms you have some really great eating.
Barley and Mushrooms Soup
Ingredients
10 cups of chicken stock
1 pound of fresh button mushrooms
2 medium sweet onions
2 stalks of celery finely chopped
1 large carrot or 2 small carrots chopped small
Method
Using your crock pot combine all the ingredients stir until it all blended well, cover and cook on low for 5 to 6 hours .
Now if you don't have a crock pot don't worry you can still do this tasty soup by adding all the ingredients in a large soup pot blend well then bring the soup to a rapid boil then reduce and simmer for 5 to 6 hours or until done.....then enjoy.
