How to Make Beef and Bean Tostadas-My Way
Crunchy, Spicy and Delicious!!!
Great But Simple Meal!
Hello again! I was craving some tostadas (crispy corn tortillas) so I decided to make some and share with you how I did it! Tostadas can be topped with anything you like, (hot sauce, dips, meats, cheeses, vegetables, etc...)! This time I made my beef and refried bean tostadas with my homemade tomatillo chile and they were great! This is a pretty easy meal to prepare and comes together really quickly. My family enjoys them and I make them regularly. If you're ready, let's get started!
My Beef and Bean Tostadas with Homemade Tomatillo Chile
1lb. ground beef
2 tsp. chili powder
1 tsp. Cajun seasoning
3 tbls. tomato sauce
1/4 cup water
1 can refried beans
1 tsp. cooking oil
1 white onion, chopped
1 tomato, chopped
1 cup cilantro, chopped
Shredded lettuce
Tostadas
Brown ground beef in a large skillet. Season with the chili powder and Cajun seasoning. Add in the tomato sauce and water mixing well. Allow to cook over medium heat until water reduces and meat mixture becomes thicker. Cover and turn to low to keep hot.
In a separate pot heat the cooking oil and add in the can of refried beans and mix well. Cook over medium high heat stirring constantly to heat the beans. Cover and turn to low to keep hot.
Take a tostada and spread a thin layer of beans on it. Top with about a tablespoon of the meat mixture and spread to cover the beans. Layer on lettuce, tomato, onion and cilantro. Serve with fresh cut limes and tomatillo chile (hot sauce). Top tostadas with the chile, squeeze lime over them and enjoy! You can also add shredded cheese on top of these as well!
I serve mine with an ice cold Mexican beer or iced tea with lime!
My Tomatillo Chile
4 to 6 tomatillos, husks removed and rinsed
1 jalapeno, stem removed
1 habanero, stem removed
1 serrano, stem removed
salt to taste
Boil all ingredients except salt in a pot with enough water to cover for 15 minutes. Drain and place in blender. Add about 1 teaspoon of salt. Cover and blend until thin as you like (I liquify mine). Taste and adjust salt to taste.
