How to Cook Beef with Broccoli Stir Fry
Irresistable!
Chinese food is popular; and beef with broccoli is among the most popular Chinese dishes in the U.S. It happened to be my favorite take-out lunch choice back in my office days in New York City.
"Simple" is the key to this dish; and "Healthy" is its benefit. Of course, "Delicious" is what brings people to the table.
You can get the ingredients pretty much at any supermarkets. The preparation time varies, but you can get it done in as little as half an hour.
I always advocate flexibility in home-cooked meals. Nothing has to be exact, that is. So use your imagination, use alternatives wherever you see fit, and more interestingly, surprise yourself and your guests!

Things You'll Need:
* Beef flank steak or tender loin, 1 lb;
* Fresh broccoli crown, 1 1/2 - 2 lb;
* Onion, half(optional);
* Fresh garlic, 4 - 5 cloves;
* Soy sauce;
* Salt;
* Sugar;
* Corn starch or all-purpose flour;
* Oyster Sauce(optional);
* Cooking oil;
* Cooking wine.
Instructions
Step 1
Thoroughly wash broccoli, cut to desired bite size;
Peel and thinly slice onion(optional);
Peel garlic, smash or dice;
Step 2
Thoroughly clean beef, slice to desired bite size;
Step 3
In large bowl, mix sliced beef with 1 tsp. salt, 1 tsp. sugar, 2 tbsp. soy sauce, 1 tbsp. corn starch or all-purpose flour, 1 tsp. cooking oil, and set aside;
Step 4
In small bowl, mix 2 tsp. salt, 1 tbsp. sugar, 3 tbsp. soy sauce, 1 tbsp. corn starch or all purpose flour, 1 tsp. oyster sauce(optional), 2 tsp. cooking oil, and set aside;
Step 5
Boil 3 quarts of water in wok or pot, add broccoli, continue on high heat for 1 minute and drain;
Step 6
Heat wok or large pan, add garlic and 2 tbsp. cooking oil, stir with spatula until garlic turns golden;
Step 7
Add beef in wok, spread evenly and form a thin layer;
Flip beef in 2 minutes, continue for additional 1 minute;
Step 8
Add broccoli, stir and cover for 1 minute;
Uncover and stir again, then cover for additional 1 minute;
Step 9
Remove cover and add onion(optional)and mixture in small bowl, wash small bowl with 2 tsp. of cooking wine or water and add to wok, stir until gravy thickens;
Step 10
Serve hot with rice, for four.
Tips & Warnings
- Use high heat
- For novice, non-stick pan recommended;
- Boil broccoli longer for tenderness;
- Do not over-cook beef;
- Use cooking wine for additional favoring.
- Cooking pan extremely hot while heating oil and garlic.
