Best Corn Salsa Recipe

     To make the best corn salsa recipe it is best to use the freshest ingredients you can find.So if you have fresh yellow sweet corn available that would be the first choice, I have used frozen sweet corn and even corn from a can and it still makes a good corn salsa; however, fresh yellow sweet corn is the best. Next you will want some fresh vidalia red onion, jalapeno peppers, a poblano pepper, fresh lime, cilantro, sea salt and pepper. Now I actually like using the pickled jalapeno pepper rings myself better than the fresh jalapeno. Also if your not familiar with poblano peppers they are like a smaller wrinkled version of a green pepper with a little more kick, but still really mild. Ok now that you know whats up, here are the exact measurements for the best corn salsa recipe.

 

Corn Salsa Recipe Measurements:

  • 2 to 3 ears of sweet corn or a small package of frozen if not available
  • 1/4th to 1/2 Red Onion
  • 1 Poblano Pepper Diced
  • 1 Fresh Jalapeno or 10 pickled jalapeno rings diced
  • 1/2 Fresh Lime juiced
  • 1 Tbs Fresh Minced Cilantro
  • Sea Salt to taste
  • Fresh Ground Pepper to taste

 

Corn Salsa All Mixed Up:

OK say here we go, if you have a grill handy it adds a very nice flavor to roast the corn and poblano pepper before cutting the corn off of the cob; however, this is optional but very good. If you don't you can simply boil the corn or steam it if your using frozen, if you are using canned just drain it. Next prepare your other ingredients, dice up your red onion, poblano peppers, jalapenos, cilantro ect. Add all ingredients to a medium sized mixing bowl, squeeze the fresh lime and add your salt and pepper. Mix together with a spoon, cover and put your corn salsa in the refrigerator for about an hour. Obviously you can eat or taste it sooner but it tends to be better after about an hour, just pull from the refrigerator, give it a quick stir and BOOM! The Best Corn Salsa Recipe on the planet, well at least I think so. Now all of the ingredients can be adjusted to your taste preference. This is for a 1 to 2 person serving size, for more simply double or triple the recipe.
