Best Sandwich Recipes for Vegans


Vegetarian Sandwiches

These are the most creative, delicious, original sandwich recipes. Sandwiches are such a nice, easy way to enjoy a simple meal. I love mushrooms and onions, so these are two of my very favorite recipes.

Vegetarian Reuben Sandwich

If you love mushrooms, onions and sauerkraut, this is the sandwich for you. For best vegetarian recipes, this is one of my all-time favorites!

8-oz. fresh mushrooms, washed, sliced

2 medium onions, sliced

2 tablespoons margarine (or olive oil)

1 cup sauerkraut, drained

salt and pepper

4 slices Swiss-style, cheese-like soy product (optional)

4 slices faux corned beef (optional)

1/2 cup ketchup

1/2 cup Veganaise (soy mayonnaise)

1/4 cup dill pickle relish

8 slices pumpernickel or rye bread, toasted

Fry onions and mushrooms in margarine or olive oil until browned. Heat sauerkraut with mushrooms and onions. Salt and pepper. In a small bowl mix catsup, Veganaise (soy mayonnaise type spread), and pickle relish. Spread ketchup mixture onto one side of each slice of bread. Divide sauerkraut mixture to place onto 4 slices of bread, then the top slice of bread. Serves 4



1 cup vegetables of choice, sliced (like tomatoes, cucumbers, squash, peppers, onions, black or green olives, pickles, lettuce, cabbage, carrots, radishes)

½ cup guacamole or ½ cup of hummus or ½ salad dressing of choice

2 small, hoagie buns

Halve hoagie buns and spread with guacamole or salad dressing, then layer with your vegetable mixture. Serves 2

Mushroom and Onion Burger

The best vegetarian recipes for hamburgers can still be in your meal planning with delicious, low-calorie veggie burgers in the frozen food sections of most stores. The main thing that people forget to do with veggie burgers is to treat them the same way you treat meat burgers: add salt, pepper, and whatever other seasonings you would normally add. After all, you wouldn’t eat a meat hamburger without seasoning—yuk!

1 pkg. 4 frozen veggie burgers of choice

4 hamburger buns

4-oz. fresh mushrooms, sliced

1 medium onion, sliced

Fry sliced mushrooms and onions in a small amount of margarine until soft. Heat burgers in microwave according to package directions. Top each burger with mushrooms & onions. Serves 4
