Breakfast Muffins and Quick Bread

Banana-Chocolate Chip Muffins

Do you have trouble getting your kids to eat fruits? This muffin recipe might very well pass the test for them! The banana-chocolate chip muffin and quick bread recipe is a favorite at my house and one of my daughter’s won’t even eat fresh bananas!

First, you will preheat the oven to 350 degrees. In a mixing bowl, place 2 cups of flour, 1 ½ tsp of baking powder, ½ tsp of baking soda, ½ tsp cinnamon, ¼ tsp ground nutmeg, 1/4 tsp of ginger. Set this bowl aside.

Next, in a separate bowl place 1 ½ cups of mashed, ripe bananas, 1 cup of sugar, ½ cup vegetable or canola oil, 2 eggs. Mix together. Once you have mixed this, blend in the dry ingredients. The batter will be slightly lumpy. Now, you can add in optional ingredients, such as 1 cup chocolate chips, 1 cup of white chocolate chips or a 1/2 cup chopped walnut or pecan.

Once you have your batter ready, you can decide what type of pan you’d like to bake in. For this demonstration I used a muffin pan and a mini bread loaf pan. However, a standard bread pan works great too.

Hi cre8ivone, I love this recipe! I always throw in a ripe banana when I use a muffin mix, although as my hubby points out they need to be mashed REALLY well otherwise they go a bit soggy. Sometimes I throw in frozen blueberries too. Thumbs up!
