Buffalo Chicken Meatballs

This is a very simple recipe and it is very easy to make.


1 lb. ground chicken

1 cup bread crumbs

1/3 cup sliced scallions

1 teaspoon each paprika and minced garlic

½ teaspoon salt

hot pepper sauce

chopped scallions for garnish (optional)

blue cheese dressing

chopped vegetables (your choice)


Preheat oven to 400 degrees F.

Line a rimmed baking sheet with foil. Spray the foil with cooking spray.

In a bowl, mix all the ingredients together and shape into 1-inch balls.

Place the meatballs on pan and bake 10 to 12 minutes until browned and cooked through.

Remove from oven and drizzle meatballs with hot pepper sauce to taste; toss to coat. Add scallion slices for garnish if desired.

Serve on toothpicks and dip into blue cheese dressing.

Add carrot sticks, sliced peppers or any other veggie you like.
