I don't know what it is about cheesecake, but when I see a beautiful slice of cheesecake in front of me, I get happy. My mouth waters, I get a dreamy look in my eye, and I smile as I anticipate taking a good, firm forkful. An ideal cheesecake is hard to describe; it's a delicious mixture of taste and texture. It is firm yet creamy and when it settles on your tongue, it's so light that it melts in your mouth.

The cheesecake actually has a long history. There has always been some form of cheesecake as far back as ancient greek times when cheesecake was served to the Olympians as a form of energy food. The first cheesecake was made from cow or goat cheese, mashed into a pulp and mixed with honey, wheat flour, and water then baked and given to the athletes to eat. Athenaeus, a Greek writer had a recipe that was recorded around A.D. 230.

Here in the US, the cheesecake that we like is made from cream cheese. According to New York City restaurant lore, Arnold Reuben, owner of the legendary Turf Restaurant was served a cheese pie and loved the taste. However, he thought he could improve on the cheese pie, and after much experimentation, he came up with the New York style cheesecake based on cream cheese that we all know and love. The Turf Restaurant no longer exists, but Mr. Reuben's famous version of cheesecake still remains. A New York style cheesecake is made from cream cheese, cream, eggs, and sugar and is baked in a graham cracker crust.

Now you don't have to be in New York in order to enjoy cheesecake. The wonders of modern retail and delivery systems have made it possible for everyone to enjoy a fresh cheesecake in its many varieties by being able to order from various providers online. As I sit down to enjoy my favorite dessert I also wonder at the marvel that is cheesecake.
