Caramalised Red Onion Chutney
This is a nice time to start making chutneys and relishes all ready for the late spring and summer months.
I made this chutney a few years ago and thought it was lovely. It is so easy to make and makes an ideal condiment to a lot of dishes whether it be a goats cheese salad, pizza topping or in cheese sandwich.
This recipe makes about 4-6 medium sized jars
- 8 red onions
- 1 red chilli
- 2 bay leaves
- 200g brown sugar
- 25ml olive oil
- 150ml red wine vinegar
- 150ml balsamic vinegar
- Cut your red onions into small thin slices and put them in a saucepan with the bay leaves and olive oil. Cut the chilli into very small slices and add to pan. (If you want the chutney to have more heat just add another chilli)
- Simmer over a low heat for about 20 minutes
- Next, add the sugar and both of the vinegars and simmer again for another 20 minutes until the chutney is thick and dark
And thats it. Eh Voila!! A lovely homemade chutney your family and friends will love.
All that is left to do is to pour chutney into hot sterilised jars and leave to cool. I would advise to keep it for a month before opening, as the flavour really matures and deepens.
You could cover the lids with pieces of fabric secured with ribbon which would make a lovely gift.
