Cauliflower Soup Recipe

Cauliflower Soup is a year round favorite in our house. In this recipe I share a simple and quick way to have this scrumptious tasting soup on your dinner table in less than thirty minutes. It's also a good choice for lunch. Just add your favorite hard bread such as French bread to complete the meal.

1 larger head of cauliflower

1 medium onion-chopped

4 cups water

1 can chicken broth

1/2 stick butter

2 cups milk

3/4 teaspoon salt

1/4 teaspoon pepper

2 tablespoons corn starch

1cup shredded cheddar cheese (optional)

Cut cauliflower into sections, removing stem and leaves first.

In large stockpotadd the water, chicken broth, onions and cauliflower.

on medium-high heat, let it come to a boiland cook for about fifteen minutes.

place in food processor and blend until smooth.

In heavy saucepan; on low heat setting, melt the butter.

Add the flour, stir until smooth.

Slowly add the milk and cook on medium heat , stirring constantlyuntil mixture has thickened.

Add salt and pepper

Reduce the heat to mediumlow and add the cauliflower mixture to the milk mixture, stirring constantly until heated thoroughly.

It's ready to serve.

Optional (Sprinkle shredded Cheddar cheeseover the top of each serving.)

I can't wait to try this recipe Becky. I love cauliflower and have never attempted making soup. I hit many buttons.

Now i love cauliflower and do make cauliflower cheese occasionally, but I've never made or even had the soup.

Must try this one. It sounds like it'll taste wonderful.

I love cheese, so the cheese topping is it!

Thanks for sharing Becky.

Chin chin, I'm sure you can substitute other veggies, but I prefer cauliflower. Thanks for commenting.

I'll try this recipe one of these days. I guess cauliflower can be substituted with other vegetables like broccoli or even mushroom.
