Cauliflower Soup Recipe
Cauliflower Soup is a year round favorite in our house. In this recipe I share a simple and quick way to have this scrumptious tasting soup on your dinner table in less than thirty minutes. It's also a good choice for lunch. Just add your favorite hard bread such as French bread to complete the meal.
1 larger head of cauliflower
1 medium onion-chopped
4 cups water
1 can chicken broth
1/2 stick butter
3/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons corn starch
1cup shredded cheddar cheese (optional)
Cut cauliflower into sections, removing stem and leaves first.
In large stockpotadd the water, chicken broth, onions and cauliflower.
on medium-high heat, let it come to a boiland cook for about fifteen minutes.
place in food processor and blend until smooth.
In heavy saucepan; on low heat setting, melt the butter.
Add the flour, stir until smooth.
Slowly add the milk and cook on medium heat , stirring constantlyuntil mixture has thickened.
Add salt and pepper
Reduce the heat to mediumlow and add the cauliflower mixture to the milk mixture, stirring constantly until heated thoroughly.
Optional (Sprinkle shredded Cheddar cheeseover the top of each serving.)
