Celery with Water Chestnut Creamed Soups
Ingredients
1 bunch of celery
1 cup of regular strength chicken broth
¾ cups of milk
1/2 teaspoon of sweet basil
1/2 teaspoon of sea salt
1/4 teaspoon of ground white pepper
2 tablespoons of cornstarch
2 tablespoons of cold water
1 12 ounce can of water chestnuts
1/3 cup of sliced almonds
1/2 cup of fine dry bread crumbs
3 tablespoons of un-salted butter melted
Methods
Trim the celery, and then slice in to 1 inch pieces. Put into a large saucepan; add the chicken broth, basil, salt and pepper. Cover and cook until the celery is almost tender but still slightly crisp, about 10 minutes then remove from the stove and place this mixture in your blender to smooth the soup out and return to the stove. Now at this point add your milk let your soup get hot then Blend the cornstarch with cold water and gradually stir into the hot stock; cook, stirring, just until thickened add your butter to give it that silky look serve and enjoy. .
