Remove the cooked potatoes from the heat. Add the cream cheese and Velveeta cheese to the potato pot. Tip: the cheese melts faster if cubed first. After the cheese is melted, you can add the rest of the ingredients.

Instead of the soup simmering in the same pot, I like to transfer it to a crock pot before adding the rest of the ingredients. Then it can set and simmer without worrying about it sticking to the pot or cooking too much.

Crock Pot Potato Soup

If using a crock pot, pour in the cooked potato and cheese mixture. Then add the rest of the ingredients. Let simmer. This is a hearty soup. Serve it with some crusty bread for lunch or dinner. You can also top the soup with bacon bits if so desired.

Hello j_barnhart / from Hamilton, AL. Tennessee? Yeah!

This is an excellent piece of writing. Amazing in every aspect of writing.

I loved every word--and the lay-out was superb.

Voted up and all the choices because you deserve it.

FACT: I love potatoes in any shape or form. Especially the dish you shared in this hub. Now, I think in fairness to me, your new follower, you should prepare me about four gallon of this nectar and bring it to me. I will pay you when you get here and it will not be a $4 tip.

You have such a gift for writing. Just keep writing and good things are bound to happen to you.

I cordially invite you to read one or two of my hubs, and be one of my followers.

That would make my day.

I am so honored to meet you.

Sincerely,

Kenneth Avery, Hamilton, Alabama
