"Cheesy Salsa potatoe and sausage Casserole"
4-6 medium to large white potatoes
1/2 cup dice oinions
1/2 cup diced bell pepper
1 tsp. garlic powder
1 tsp. onion powder
1 whole smoke sausage (cubed).
1 cup dice velveeta chunks
1/2 cup bacon bits
1 Tbs. butter
1/2 tsp. blk.pper
1 sp. salt
1 cup of your favorite salsa
1/2 cup can milk
Directions to prepare:
Peel, quarter and wash white potatoes and put tem in a pot and cover with water and boil until done but, still firm not nushy.
Drain off water except for about a cup of water. Add butter, bell pepper, onions, salt, blk.pepper,milk,onion and garlic powder. Pour into pyrex bowl and mix ingredients.
Add: sausage, and salsa over top of potatoes, then pour over the top of all ingredients velveeta cheese chunks. then sprinkle bacon bits over evrything. put in the oven at 400 drgrees for 35 to 45 minutes or until bubbling, cheesy and lightly brown. this a great tasting recipe for a side dish or eaten alone.
