Cherry Cheesecake Bar recipe Christmas Classic
PERFECT TO TAKE TO WORK
This recipe is one I make every Christmas for my family. This is also the recipe I always take when the office has a food day. The bar cookies are very popular and there is never any left at the end of the day.
The dessert looks good and is not complicated, It takes a little time but not too much effort.
I hope you enjoy the cookies as much as my family does.
1 CUP WALNUTS, DIVIDED
2 8 OZ CREAM CHEESE, SOFTENED
1 1/2 CUPS FLOUR
2/3 CUP SUGAR
1/2 BROWN SUGAR
1/2 C BUTTER
2 TEASPOONS VANILLA
1/2 CUP COCONUT
21 OUNCE CAN CHERRY PIE FILLING
Chop half the nuts coarsely, then the other half finely.
Spray 13 x 9 pan with cooking spray.
Preheat oven to 350 degrees.
Mix flour and brown sugar. Cut in butter until fine crumbs form. Add 1/2 cup finely chopped nuts and coconut.
Reserve 1/2 cup of this mix for the topping.
Press the rest of the mix in the bottom of the pan and bake for 12-15 minutes, until the edges are lightly browned. Set pan aside while making the filling.
Mix cheese, sugar, eggs and vanilla until well blended. Spread over the baked base.
Bake 15 minutes, remove from oven.
Spread pie filling over the hot cheese mix.
Blend the crumbs you set aside with the coarse nuts. Sprinkle this mix over the pie filling.
Bake 15 minutes. Let cool and then put in refrigerator until ready to eat.
Don't cut until it is cool.
