Delicious Gluten Free Chocolate Chip Cookies

This recipe makes for the perfect chocolate chip cookie, deliciously crispy on the outside and chewy on the inside. The secret ingredient to making this delicious and decadent cookie is organic coconut flour.

Naturally nutritious and delicious coconut flour is fiber from the coconut meat after the oil has been extracted. High in fiber and protein it's also gluten free which makes it a great choice for someone on a gluten free diet.

But you will find this cookie so delicious that most people even those not on a special or restricted diet will enjoy it.

2 oz. coconut flour
8 oz. brown rice flour
2 tbs. tapioca flour
1 1/4 oz. corn starch
1/2 tsp. salt
8 oz. melted butter
1 tbs. almond nut butter
1 tsp. xanthan gum
1 tsp. baking soda
2 oz. granulated sugar
8 oz. brown sugar
1 egg plus 1 egg yolk
2 tbs. milk
2 tsp. vanilla
9 oz. semi-sweet chocolate chips

1. Mix together the flours, baking soda,xanthan gum and salt.

2. Cream the butter, nut butter and sugars together then add the eggs, milk and vanilla mixing well.

3.Slowly blend the flour mixture into the eggs and butter mixture, blending well.

4. Add the chocolate chips and mix well.

5. Chill chocolate chip dough in refrigerator for approx. 1 hour.

6. Preheat oven to 375 degress.

Grease or line your cookie sheets with parchment paper. Roll the cookie dough into 1 inch balls and bake for approx. 8-10 minutes. If you prefer a more chewy cookie 8 minutes is just about right.

Recipe makes 3 dozen cookies.

I've tried so many GF chocolate chip cookies, and these look incredible! I'll have to give them a try, and enjoy experimenting with the coconut flour.

It's a little extra work if you've never baked gluten free before, but very well worth it in the end.
