Quick Chicken Recipes

With all the things we need to get accomplished each day cooking a good meal seems to fall by the sidelines. It's not a lot of fun to be rushing around all day working, then come home and have to rush around in the kitchen. There you are surrounded by a hungry family who expects you to come up with a feast. What do you do? Call for a pizza? I know, bundle everyone back into the car and head for the closest fast food joint. WRONG! You try one of my recipes that are fast and easy to make, delicious to eat, and won't cost you an arm and a leg.

By the way, all of these recipes can be put together within minutes and you can relax, take a shower, or just have a cup of coffee while they are cooking. Enjoy.

Chicken Casserole in a Hurry

 Ingredients:

3 chicken breasts, cut in half

or, 6 chicken thighs

1/2 tsp seasoned salt

1/4 tsp black pepper

1/2 tsp garlic powder

3/4 cup flour

1/2 tsp seasoned salt

2 tbsp parmesan cheese

1/2 cup oil

1 cup instant rice

1 10oz can cream of chicken soup

3/4 cup half and half cream

Directions:

Preheat oven to 350 degrees.

Wash chicken, dry and sprinkle each piece with seasoned salt, black pepper, and garlic powder.

Mix flour, seasoned salt and parmeasan cheese and coat chicken pieces.

Heat oil in a large frying pan and brown chicken on both sides.

While browning chicken cook instant rice according to directions on the package.

After rice is cooked mix in cream of chicken soup and half and half cream.

Place rice mixture into buttered casserole dish and top with chicken pieces.

Bake for 35 to 40 minutes.

Serves 6.  To complete your dinner add a prepackaged salad and some crusty rolls with butter.

Chicken and Gravy in a Snap

Ingredients:

2 to 3 lb cut of chicken

1 1/2 cups flour

1/2 cup Italian bread crumbs

2 tbsp parmesan cheese

1 tsp seasoned salt

1/4 tsp black pepper

1/2 tsp garlic

1/2 cup oil

2 tbsp butter

3 1/2 cups warm water

1 small can of mushrooms, drained

Directions:

Wash chicken and pat dry.

Mix flour, Italian bread crumbs, parmesan cheese, seasoned salt, pepper, and garlic together in a paper bag.

Place a couple of pieces of chicken in bag and shake to coat with flour mixture.

Heat oil in a large fry pan.  When oil is hot add chicken and brown on all sides.

When chicken is browned remove from frying pan and pour off excess oil.

Pour warm water into frying pan and add butter.  Heat until it just begins to boil.

Add browned chicken to frying pan and simmer on low.  Cover tightly.

Cook for 35 minutes or until chicken is tender. 

5 minutes before you serve, add a small can of mushrooms.

The liguid will thicken and make a nice gravy.

While you are waiting for the chicken to cook you can make mashed potatoes or rice.  To make it even easier, you can make instant mashed potatoes or instand rice.

Open up a can of green beans and you have yourself a quick, easy, hearty meal.

Quick Chicken With a Hint of Wine

 Ingredients:

1 2 to 3 lb chicken, cut up

1/2 tsp seasoned salt

1/4 tsp black pepper

1/4 tsp garlic powder

1 cup onion, chopped

1/2 cup olive oil

1/2 tsp thyme

1/2 tsp parsley

1/2 tsp celantro

1/2 cup wine vinegar

1 cup Chablis

Directions:

Preheat oven to 350 degrees.

Place chicken in a large buttered baking dish.

Sprinkle with seasoned salt, black pepper, amd garlic powder.

Spread chopped onion on and around chicken.

Drizzle all ingredients with olive oil.

Sprinkle with thyme, parsley and celantro.

Cover and bake for 35 minutes.

Add vinegar and wine, cover and bake for 20 more minutes.

Uncover and bake for 10 minutes to brown the top of the chicken.

This sauce is great over mashed potatoes, rice or noodles.  Add a prepacked salad, some crusty rolls with butter and you have a meal fit for a king.
