Chicken Inasal (Chicken Barbecue) Recipe
How to cook Chicken Inasal
This is recommended for any occasion especially Christmas or even Thanksgiving Day aside from serving Roast Turkey or have this Chicken Inasal as substitute.
1.5 kilos or 3.3 lbs chicken, cut into serving pieces
½ teaspoon black peppercorns, cracked
6 cloves garlic, minced
½ cup palm vinegar
juice from 5 pieces calamansi or from 1 lemon or lime
1 teaspoon annatto seeds (achuete) soaked in ¼ cup water, strain and discard seeds
½ teaspoon salt
Combine chicken, garlic, pepper, lemon/lime or calamansi juice, annatto water, vinegar, and salt. Marinate overnight. The next day, remove the chicken from the marinade. Do not throw the marinade for you can use it for basting the chicken while cooking. Insert the skewers into the chicken pieces. Grill the chicken over hot coals until both sides are cooked. Baste it occasionally with the marinade.
Serve warm with any sauce you desired like soy sauce with vinegar, lemon or calamansi, garlic, onion.
