MMM..CHICKEN!

I will start this off saying I LOVE CHICKEN! Yes, I do. Chicken is one of those foods I can eat for lunch and dinner for a few days in a row and not let it get to me. One of my favorite chicken recipes is what I like to call Hawaiian themed chicken or Honey Volcano chicken (very creative eh?). These two dishes are made quick and easy with a little prep. Overall, what comes out is a great dinner or lunch that you, your family, and your friends will adore!

Hawaiian themed Chicken Dish

Wither it really tastes Hawaiian or not, thats what I call it.

What You Need:

  • Chicken Breasts (Any size or amount)
  • Bottle of World Harbors Sweet n Sour Sauce
  • Bag of Success Rice Brown Rice
  • 2 Oranges, 2 Lemons, 1 Lime (For each bag of rice used)
  • 1 Can Pineapple chunks

Tip

Prep chicken that morning or early afternoon and let sit all day marinating in refrigerator, remember to flip the bag over once or twice during the day!

Prep:

Take your chicken breasts and wash them (cut off any fat thats there). After washing dry chicken with a paper towel. Place chicken breasts in a Ziploc bag (or Tupperware box) and pour in half a bottle to 3/4ths a bottle of Sweet n Sour sauce. (make sure its well coated). Shake the chicken around a little and place in the refrigerator for at least 2 hours.

Procedure

For best results, follow these steps in order!

1. Turn on Grill, let it heat up.
2. Put water in pan to boil for rice.
3. Take oranges, limes, and lemons and using a Zesting tool Zest the fruit into a small bowl.
4. Put the rice on and go cook the chicken all the way though. (Sample a piece or use a thermometer to make sure its cooked all the way. should be at 165 degrees or more at center!)
5.Drain Rice and return to pan, mix in the Zest with a little butter.
6. Flaten rice on a plate and place chicken on top.
7. Drain Pineapple chunks and place them around the dish on the edges.
8. Slices of lemon, lime, and orange can be used to garish the top of the chicken.
9. ENJOY!

Honey Volcano Chicken Dish

Now this recipe isn't really that "hot" but thats up to what sauce you choose! Some like it really hot, I prefer the more Honey-BBQ taste.

What You Need:

  • Chicken Breasts (Any Size or Amount)
  • Bottle of Kraft Honey BBQ Sauce (Or Hotter Alternative)
  • Bag of Success Brown Rice
  • 1 Cup Lite Coconut Milk
  • Lime Juice
  • Cilantro

Tip

2. Instead of using 1 cup of water for the rice, use 1 cup lite coconut milk.
3. Put the rice on and go cook the chicken all the way though. (Sample a piece or use a thermometer to make sure its cooked all the way. should be at 165 degrees or more at center!)
4. Drain rice and return to pan, mix in some lime juice to best taste.
5. Add well chopped cilantro to the rice, mix well.
6. Flatten rice on plate and put chicken on top.
7. Brush a thin layer of lightly heated Honey BBQ sauce on top of chicken.
8. ENJOY!

Regardless wither your in the mood for the Hawaiian or the Volcano, both of them are great choices! Just get a nice cold beer or root beer (best two drinks that go with these dishes) and kick back and relax!
