Chicken Recipes For Your Slow Cooker

Chicken Yum-Yum

4 chicken breast
1 small can pineapple chunks
1 can of ready to cook buscuits-(keep refrigarated until one hour before dish is done) then cut each one into 1" pieces and add to pot.
1 med. onion-diced
4 stalks celery -diced
5 large carrots-diced
2 green bell pepper-seeded and chopped or diced
6 tablespoons of soy sauce
1/2 teaspoon each of salt, pepper, garlic powder
3 tablespoons of brown sugar
2 cups of water

Simple Directions

Add all ingredients except for the buscuits.
Stir to mix.
Place lid on and let slow cook on high for 4 hours, then add the cut up buscuits. Cook for an additional hour.

Taco Chicken Dinner

Spanish Chicken and Rice

4 boneless, skinless chicken breast

1 pound Italian sausage

3 tomatoes-skins removed

1 large can of tomato sauce

6 ounce bottle of tomato juice

1/2 cup each of chopped onions, green bell peppers

1 large clove of garlic or 1 teaspoon garlic powder

1 teaspoon, dehydrated Italian seasoning

1/2 tsp. salt, 1/2 teaspoon black pepper

2 tablespoons olive oil

1/2 cup water

1 cup converted long grain rice

non-stick cooking spray, enough to coat the inside of the slow cooker

Directions

Coat the inside of slow cooker with non-stick cooking spray

Cut the chicken breasts into cubes

In a bag mix the flour, salt and pepper

Put cubed chicken into bag and shake to coat each piece

In medium skillet, brown sausage, drain on paper towel

In same skillet, brown breaded chicken cubes

Place chicken in slow cooker

In the skillet; Add the tomatoes, tomato sauce, juice, Italian seasoning and rice and water Bring to a boil. Stir and scrape bottom of skillet.

Pour over chicken in the slow cooker

Add the onion green bell pepper and garlic. Stir to mix.

Cover and cook for 3 hours on high or 5-6 hours on low or until rice, vegetables and chicken are tender.

Stir before serving.

Crockpot Chicken A La King

4 boneless, skinless chicken breast

1 - 10 ounce package frozen peas and onions, thawed and drained

1 small jar pimientos

1 can cream of chicken soup

1 teaspoon celery salt

1/2 teaspoon paprika

1/4 teaspoon black pepper




Directions

Cut chicken breast into bite-sized pieces. Place in slow cooker.

In mixing bowl, add soup, flour and pepper. Stir until blended. Pour mixture over chicken.

Cover and cook on high for 2 1/2 hours or on low for 5 hours or until chicken is tender.

Stir in remaining ingredients; peas and onions, pimientos, celery salt, paprika and pepper. Stir once to mix. Put lid back on and cook an additional 30 minutes on high.

Serve over rice.




Slow Cooked Curry Chicken

Chicken Marengo

8 Chicken breasts

1/4 cup all-purpose floue

1 1/2 cups frozen small white onions

1 can of stewed tomatoes (cut up and save juice (liquid)

1 4 ounce can sliced mushrooms-drained

1 bay leaf

1 tablespoon dried parsley

4 cloves of garlic-minced

1 teaspoon dried thyme

1 teaspoon salt,

1/4 teaspoon pepper

2 tablespoons vegetable oil

Directions

Rinse and pat dry the chicken

In a large skillet add the oil and brown the chicken on both sides

Place in the slow cooker

Add onions to skillet. Saute for 3 minutes. Add the stewed tomatoes and juice, mushrooms, garlic, parsley,salt, pepper, thyme, bay leaf and the remaining flour. Bring to boil, stirring constantly.

Pour over chicken in slow cooker.

Cover and cook 2-1/2 - 3 hours on high or 6 - 7 hours on low until chicken is good and tender

Serve over pasta
