Mother's Have Such A Busy Life.

This recipe is quick, easy and cheap. I love chicken thighs and they are low cost and have such a good flavor. It's quick if you count just throwing in the pot and leaving it there. I'm not a chef, but you see top chefs on television now using chicken thighs in their recipes.

I think mother's have it hard nowadays. They work all day, their picking kids up here and there and going for this activity and that. Busy, Busy. This recipe is just as good as any casserole and great for dinner.

I often wonder why so many moms’ stops at fast food places to buy food for their kids. It's so easy to put a meal in a crock pot (slow cooker) and have it ready when they get home. I know, I know, kids have so many activities they're in nowadays it's hard for everyone to be home at once. Often they stay at school for their activities and don't get home until late. It's a fast moving world we all live in. I see this with my granddaughters.

I know you can't use the crock pot all the time but it is money saving and it can be ready whenever the kids get home from school.

Chicken Thigh Crock Pot Dinner

A cheap crock pot recipe.

6 Chicken Thighs ( I bought the bag at Wal-mart)

1 bag of Green Giant Pasta, Broccoli, Carrots, and Cheese Sauce

1 can of Campbell's Cheddar Cheese soup

Tablespoon of Italian Seasoning

Tablespoon of Roasted Garlic and Bell Pepper Seasoning

1 Chopped garlic

salt and pepper to taste

In the morning around 10:00 I add frozen thighs and seasonings to my crock pot. Cooked on high until 2:30. Drain all the grease off and remove skins if you want. I strained the grease and put the seasonings back in. Then add the Green Giant bag and cheese soup cook until done. They were done around 4:00 came out perfect. Serve with rolls.

Cook time: 6 hours
Ready in: 6 hours 20 min
Yields: 6

Whatever you might call it slow cooker or crock pot. New crock pots come with locking tops so they are easy to carry anywhere you might go. You can make great meals with it.

This meal can be cooked any way you want. You can cook the chicken the during the night drain in the morning and add the rest of the ingredients when you get home from work or throw all in pot and cook on low until your home from work. If you work you won't be able to drain. I did because I'm home. Everyone goes to work and comes home at a different time so I guess you will have to figure it out according to the way you work.

 

My Husband and his brother loved this. Their mother with (8 kids) always served this type of casseroles.

Old Crock Pot

I have four crock pots (slow cooker). My favorite is the old Rival from the 70's with a liner which can't be removed in olive green color. I don't know why I like this one the best. I guess I think it cooks a little better and it's smaller to use for the two of us.

Chicken Thighs

I watch most all the cooking shows. Chefs are now starting to use chicken thighs instead of chicken breast. Our family loves the thighs, not as dry as a breast meat, not to mention the thighs are cheaper and chefs are starting to realize in this economy we all need cheaper meals. With the hot weather burning up crops causing food prices to go up.

I think most women aren't at home at 10:00 AM or 2:30 PM. Most of us are at work early. I have to be at work by 6:45 AM. Lots of my coworkers are there before 6 or shortly after. Sometimes we get a few minutes in the middle of the day to go home or run errands, but not always. Lots of moms who work where I do bring their kids to school with them. If their kids are school aged they catch the school bus from the school's transportation dept. If they're little ones, they stay with mom or dad while they work.

This looks like a good recipe for the weekend. Weekends are pretty busy for people with school age children too, but there's usually a little more time. I like the vegetables you're adding. This looks like a great comfort meal. Voted up and useful.

I am definitely saving this one! I prefer chicken thighs, too, and am starting to use them more often in recipes. This looks wonderful. My mom had an old rival, too, but it was bright orange rather than green. She bequeathed it to me, but I eventually got one with the removable interior, as it was a pain to clean.

I love cooking with my slow cooker. So easy and makes the flavors so good.... Thanks for this recipe! Oh, and I love the photo of your counter and all the colorful things on it!

This sounds good, I'd like to try it but we can't get that kind of soup over here so I'll have to substitute something like mushroom soup instead.

At the beginning of the recipe do you just put in the frozen chicken and seasoning with no added liquid? (I'm new to slow cooking by the way & not tried chicken in it yet!)
