Everyone seems to like chicken wings. In America, when you mention chicken wings you immediately think of Buffalo wild wings which are deep-fried and then coated with butter and hot sauce.

In China however, you are more likely to think of them coated with oyster flavored sauce. This is such a recipe and it also calls for button mushrooms.

The chicken wings are first disjointed, coated with soy sauce and cornstarch and then deep-fried in oil until golden brown.

Next you stir-fry the "Chinese Trinity", (garlic, ginger and scallions.) Then you add the chicken wings, the mushrooms and the oyster sauce mixture to the pan and cook them until the wings are tender.

Of course you could substitute Chinese mushrooms for the button mushrooms or you could use a combination of several different mushrooms.

Another interessting variation would be to add blanched snow peas and sliced water chestnuts. Use your imagination.

Ingredients:
2 Lbs. of Chicken Wings
1 Tablespoon of Black Soy Sauce
2 Tablespoons of Cornstarch

Preparation:
- Disjoint the wings into three parts, rinse them in cold water and pat them dry on paper towels.
- Place the wings and the soy sauce in a gallon zip-lock bag and shake them until the wings are evenly coated.
- Add the cornstarch and repeat the process.
- Deep-fry the coated wings in four cups of oil until they are golden brown working with half of the wings at one time to make two batches.
- Remove the wings to a bowl with a drainer or slotted spoon.

8 Oz. of Fresh Button Mushrooms (washed, cut in half and drained)
1 Tablespoon Minced Garlic
1 Teaspoon Minced Ginger Root
1 Tablespoons of Oil for stir-frying

Sauce Mixture:
4 Tablespoons Oyster-flavored Sauce
1 Tablespoon Black Soy Sauce
1 Tablespoon Dry White Wine
½ Teaspoon Sugar
½ Cup Water

Cooking Instructions:
Stir-fry the garlic, ginger and scallions in the oil for about 60 seconds.
- Add the sauce mixture and simmer for about 30 seconds.
- Finally add the chicken wings and mushrooms and cook covered for about 25-30 minutes until the wings are tender.
- Serve with steamed rice and a green vegetable.
