Chili Con Carne. What Is It? And How Do I Make It?
Chili Con Carne means literally chili with meat and the name Chili Con Carne is a popular name for a chili recipe that contains meat and beans. Yes beans. I know chili lovers in Texas will fight you over putting beans in chili but beans belong in a big pot of Chili Con Carne. I prefer red kidney beans but in Texas the most common bean used in Chili Con Carne is pintos.
In Spanish chili refers to a chili pepper and carne means meat. It was the San Antonio Chili Stand at the 1893 Colombian Exposition at Chicago that made chili popular and it wasn't long before people were making chili all over the United States.
Did you know that Chili Con Carne is the official dish of the state of Texas and has been since 1977 when it was made official by the Texas State Legislature.
Did you know that I think I make one of the best Chili Con Carne's in the world and that I've won thousands of dollars in prizes for this oh so wonderful chili plus a slew of trophies and ribbons. I think I make the best chili in the world but you will find a lot of people who say they make the best chili in the world. I just disagree because I know I make the best chili in the world. In fact I'm going to share with you here the recipe that I used to win at St Louis last year. You can easily follow the same recipe and produce one of the most delicious chili's you'll ever eat in your life.
Chili Con Carne Recipe
1. 2 Pounds Of Ground Beef.
2. 1 Pound Of Ground Pork.
3. 1 Large Sweet Onion Diced Fine.
4. 2 Tablespoons Minced Fresh Garlic.
5. One Half Cup Diced Fine Green Bell Peppers.
6. One Fifteen Ounce Can Diced Tomatoes With Green Chilies.
7. One 12 Ounce Bottle Dark Beer.
8. One Fifteen Ounce Can Diced Tomatoes.
9. One Six Ounce Can Tomato Paste.
10. One Tablespoon Brown Sugar.
11. One Tablespoon Ground Cumin.
12. Two Tablespoons Chili Powder.
13. One Teaspoon Oregano.
14. One Teaspoon Paprika.
15. One Teaspoon Ground Sea Salt.
16. One Teaspoon Ground Black Pepper.
17. One Teaspoon Crushed Red Pepper.
18. One Teaspoon Hot Sauce.
19. Two Fifteen And A Half Ounce Cans Of Red Kidney Beans Washed And Well Drained.
20. Two Fifteen And A Half Ounce Cans Of White Kidney Beans Washed And Well Drained.
You will want to start by browning your ground beef and your pork until brown and drain the liquid off. You want to cook it until its done but you don't want to overcook it. You want to be sure to drain it very well when you your ready to drain it.
Let me tell you something about flavor here. You can use the cheapest hamburger and you'll end up with the best flavor. Since your draining it well its quite alright to use the cheapest brand of hamburger that your grocer sells.
Once you have all your meat well browned and drained set it aside. In a large skillet cook your celery, peppers, onions, and garlic until it is just done but not brown. Now that you have your meat browned and the veggies cooked pour them out into a large heavy stock pot. By using a large heavy pot there is less of a chance for it to stick.
Now add all of your ingredients to the stock pot and bring it almost to a boil but not quite. Then turn it down to medium and allow it to cook for about two and a half hours stirring often from the bottom of the pot.
You can never cook a pot of Chili Con Carne like this in a crock pot or slow cooker and have it turn out right. It must cook down in order for it to turn out right.
Any dark beer will work in this recipe. The alcohol all cooks out of the chili while it is cooking.
If you want to end up with a delicious pot of chili con carne be sure to cut all of your veggies up small. About the size of the word small will be about the right size. You can use a large sharp chefs knife to cut your veggies up with.
When your cooking your veggies you want them to get just brown but you don't want them to get brown.
Be sure that you drain your browned meat and veggies very well. If your sure to do this you'll end up with one of the best pots of chili that you'll ever taste.
Once your chili con carne is done serve it in a bowl over a square of corn bread and top it with shredded cheddar cheese, diced sweet onions, and diced jalapenos. I guarantee you that people will love it. I've been making this particular recipe for about forty years now and people love it.
One thing to keep in mind is to allow your chili to cook down and reduce in volume over medium heat. I can't stress enough how important this is. If you want the best chili con carne you must cook it down. This is the reason it won't work in a slow cooker or crock pot.
This chili will always be better the day after it has been made and spent the night in the refrigerator. If you have a layer of grease on top of your chili after it spends the night in the refrigerator scoop off the layer of grease carefully being sure to remove and discard all of it before you heat your chili up.
Its very important to wash your beans well and drain them before adding them to your pot of chili. You'll end up with the best flavor this way.

Here we have a delicious chili con carne in honor of those Texas purists that think beans don't belong in even chili con carne. You see chili was born in Texas. By 1905 chili had become extremely popular in Texas and there were chili parlors being opened all over Texas.
Bob Pool's Chili Parlor in Dallas Texas became one of the best known Chili Parlors ever. One reason it became so famous was because it was right across the street from the headquarters for the Neiman Marcus Department Store. Stanley Marcus the president of Neiman Marcus ate there frequently and he even used air express to ship the chili from Bob Pool's all over the United States. During the Second World War Eisenhower's staff would order chili from Bob Pool's to be delivered to their Paris France office.
This recipe is supposed to be real close to the chili that was once served at Bob Pool's. It's a hearty rich chili that everyone loves. I suggest cooking a pot of pintos with a little salt pork, and salt and serving them on the side with the chili. This way the people that want beans can add the pintos to their bowl of chili. You might also want to offer squares of corn bread, and small bowls of diced fresh jalapenos, diced onions, sour creme, and shredded cheddar cheese. This way you can make it into a festive chili party that I guarantee you people are going to love. First of all I'm going to tell you how to make a delicious pot of pinto beans in the crock pot or slow cooker.
Crock Pot Pinto Beans Recipe
First of all take a pound of dry pinto beans and look them carefully for dirt or small stones. Then wash them in a colander with cold running water to make sure they are very clean. Put your washed pintos into the crock of the crock pot and cover them with water but don't turn them on. Put the lid on them and allow them to soak overnight. In the morning once again wash your soaked pintos off under cold running water. You'll find that your beans will cook a lot faster now and there will be a lot less gas.
Put the pinto beans back in the crock pot and cover with water. Add in six ounces of fine chopped well washed salt pork and a teaspoon of salt. Turn the pot on high for six hours. Be sure to keep the lid on the pot and resist the urge to peek. If you want spicy pinto beans add a fourteen and a half ounce can of tomatoes and chili peppers before you add the water. Some people like them with the tomatoes and chilies and some people like them with out.
After they have cooked for six hours on high in the crock pot stir them well up from the bottom of the pot. You should have one of the best pots of pinto beans you'll ever taste in your life. Me and my family have cooked them this way for hundreds of years.
Copycat Recipe Of Bob Pool's Chili Con Carne
1. Two Pounds Of Lean Beef Chuck Roast Cut Into Small Bite Size Pieces.
2. One Tablespoon Masa Harina Dissolved In A Half Cup Of Water.
3. One Fifteen Ounce Can Tomato Sauce.
4. Five Tablespoons Chili Powder.
5. One Cup Fine Chopped Yellow Onion.
6. One Tablespoon Brown Sugar.
7. One Teaspoon Ground Sea Salt.
8. One Teaspoon Ground Cayenne Pepper.
9. One Sixteen Ounce Pepsi.
10. Two Cups Beef Broth.
11. One Tablespoon Minced Fresh Garlic.
12. One Tablespoon Oregano.
13. One Tablespoon Cumin.
14. One Six Ounce Can Tomato Paste.
Cook your garlic and onion in the oil until it is soft and then add in your beef. You want to do this in a large skillet so you have plenty of room. You only want the onion and garlic to get done and the meat needs to be brown on all sides.
Pour the meat and onions and garlic into a large heavy stock pot. Now add in all the rest of your ingredients but the Masa Harina and bring it up to a boil. As soon as it reaches a boil turn the heat under the pot down to medium while stirring the pot often with a large cooks spoon up from the bottom of the pot.
Cook on medium heat for two hours partially covered. Be sure that you stir your pot often up from the bottom of the pot so your chili does not stick. You can spray the inside of your stock pot very well with a vegetable cooking spray before you start using it to be sure your pot doesn't stick and to make the clean up a lot easier.
After two hours stir your Masa Harina up in a half cup of water until it is very well mixed together and then stir it into your pot of chili with a wire whisk. Continue to cook for about twenty minutes and then turn the heat off under the pot. Let your chili cool to room temperature and then pour out into a large plastic container that has a lid. Before you pour the chili into the plastic container be sure to spray the inside of the plastic container very well with vegetable cooking spray. This will make clean up so much easier later.
Put the covered container of chili into the refrigerator over night. The next day you can reheat your chili in a large crock pot or slow cooker. If your having a chili party and feeding a lot of people use two crock pots if you need to.
I like to set up a chili bar with the crock pots and small bowls of sour creme, guacamole, diced green onions with tops, cheese, diced jalapenos, squares of corn bread and a crock pot of pintos so people can add what they want to their bowls of chili.
I promise you that this will be one of the best chilies you'll ever eat in your life. Yes it really is that good. Especially if you serve it with the sides, corn bread, and the pintos.

Over the years I've worked hard at coming up with a simple but delicious Chili Con Carne recipe for everyone to make and enjoy. Here were once again going to be cooking our chili in a large heavy stock pot. Spray your stock pot very heavily on the inside with vegetable cooking spray so the chili won't stick and so that the clean up later will be easy.
When I'm making and putting together a chili recipe I go for flavor. I put things together that are going to taste really good when the items are cooked together and that are going to complement the flavor of each other when the chili is done.
Here were going to be using a pound of ground pork and a pound of lean stew beef for our chili. Those two items really go well together and work to give your finished chili a flavor that will have you wanting more.
Here I suggest buying a pound of Roma tomatoes and you will want to drop the tomatoes into boiling water and scoop them out with a slotted spoon. The tomato skins should slip right off. Then you will want to use a large knife to dice your tomatoes up fine.

3. One Pound Roma Tomatoes Prepared As Described Above.

6. One Tablespoon Minced Fresh Garlic.
7. One Cup Fine Diced Yellow Onion.
8. One Teaspoon Ground Cumin.
9. One Teaspoon Oregano.
10. Two Tablespoons Chili Powder.
11. One Tablespoon Ground Sea Salt.
12. One Six Ounce Can Tomato Paste.
13. One Teaspoon Ground Paprika.
14. One Sixteen Ounce Bottle Of Pepsi.
With those twelve ingredients you can make a simple but delicious Chili Con Carne that is going to be so delicious and its really easy to make. The secret ingredient in this chili is Pepsi. Yes regular Pepsi. It helps to make some of the best chili you will ever taste in your life.
You need to first cook your peppers, garlic, and onion in a little vegetable oil until it is soft and cooked but not brown. Be sure that you don't overcook your veggies or you can get a bitter flavor. As soon as the veggies are done put them into a large stock pot.
Now in a little vegetable oil brown all your meat together until your meat is well browned on all sides. Drain your meat in a colander to get rid of any excess liquid.
Now add all the rest of your ingredients to the stock pot and turn the heat on under the pot letting it come up to a boil before you reduce the heat to a medium setting. Allow your ingredients to cook on medium heat for 3 hours. If your chili seems to get to thick while it is cooking add another cup of Pepsi but no water. Be sure to stir your pot of chili often being very sure to stir up from the bottom of the pot so it does not stick.
This version of Chili Con Carne is my favorite. I worked a long time trying to make it with beef broth or water before I thought of trying it with the Pepsi. The Pepsi works perfect and the taste of the finished Chili Con Carne is just perfect.
As with the other recipes above serve your chili over a square of corn bread in a bowl and offer sides in small bowls like diced green onions including the tops, diced fresh jalapenos, sour creme, guacamole, taco chips, Mexican Cheese, and etc. Its your chili party so add what you like.
