Great Recipe For Chili With No Beans
This is a really great chili eaten by its self or you can make some of the best hot dogs and hamburgers in the world by adding this chili with no beans to your hot dogs or hamburgers.
You will want to start off with one pound of course ground beef and one pound of course ground pork. Cook both mixed in the same pan and to the meat you will want to add.
1. 1/4 Cup Chili Powder.
2. 1 Tablespoon Fresh Ground Garlic.
3. 1/4 Cup Purple Sweet Onion Chopped Fine.
4. 1 Teaspoon Ground Sea Salt.
5. 1 Teaspoon Cayenne Pepper.
6. 1 26 Ounce Can Diced Chopped Tomatoes.
7. 1 6 Ounce Can Tomato Paste.
You will want to cook your meat together and drain it very well. Then add in all your other ingredients and cook over low heat for about two hours stirring often. You will want your heat to be low and you will want to stir your chili often to make sure to mix up all your ingredients up together well.
You can make this chili well ahead and keep it in the refrigerator for up to a week. You can freeze this chili for up to three months. As I said above it is really good on hot dogs and hamburgers.
I like to put this chili on foot long hot dogs along with slaw , cheese , and onions.
This chili is also very good in a bowl with Mexican cheese , sour cream , and crackers. Some people as I said above in some parts of the United States including parts of Texas prefer their chili with no beans.
You can add this chili , shredded Mexican cheese and sliced jalapenos to fries to make some of the best chili cheese fries that you will ever eat.

How To Make Great Chili Con Carne
Chili Con Carne literally means , Chili with Meat. You will hear arguments that chili or Chili Con Carne should or should not contain beans. I personally think it should contain beans and I think they should be pinto's. You will find that pinto's will give your chili or chili con carne a flavor that most people will agree that it is the best in the world.
In this recipe for what I consider to be the world's best chili con carne I use pinto beans and other fresh ingredients that you will need to use also if you truly want the worlds best tasting chili con carne.
To start with start with two pounds of dry pintos that you have washed completely clean and checked thoroughly for little bits of rock. Wash your beans and once you have washed them place them in a container and cover them with water and soak at least over night. Once you have soaked your pinto beans over night wash them off and cover them with water. Into your beans place a ham hock that you have washed thoroughly. To the pot add the below.
1. 1 Cup Purple Sweet Onion.
2. 1 Tablespoon Fresh Grated Garlic.
3. 1 Teaspoon Ground Cayenne Pepper.
4. 1 Tablespoon Ground Sea Salt.
Cook until your beans are done and your ham hock is falling apart. Remove the meat from your ham hock and chop it up and add it back to the pot of beans.
Now you will want to cook one pound of lean ground beef and one pound of ground pork until well brown and drain away all the grease. Its very important that your meat be well browned but not burned and that it be well drained. Once the meat is browned and drained add it to your beans and stir it in well.
Now you will want to add the below ingredients and cook over low heat for two to two and one half hours.
1. 1/4 Cup Chili Powder
2. 2 26 Ounce Cans Crushed Tomatoes.
3. 1 6 Ounce Can Tomato Paste.
4. 4 Whole Jalapeno's with the stems removed.
Cook your chili con carne over low heat until the juice is thickened.
All the time your chili con carne is cooking lay your whole jalapenos on top and let them cook adding flavor to the chili con carne. When you are sure your chili con carne is done you can remove your cooked jalapenos and discard them.
Serve your chili con carne in a bowl over a large serving of Mexican cornbread. You can make your chili con carne even more delicious by serving shredded Mexican cheese , fine diced onion , sour cream and guacamole on the side so people can add it to their chili con carne if they wish.
And you have just created one of the most delicious chili con carnes you will ever eat. Remember the pintos are a important part of your chili con carne.
Chili For Your Tailgate Chili Party
Here's a wonderful but simple chili that your sure to love and enjoy. Its full of flavor and there's plenty of spice. One really simple Texas chili trick is you want to be sure to season your meat with plenty of chili powder , cumin and salt while its cooking. And one really important thing to keep in mind is don't try to rush your chili when your cooking it. Cook your chili slow over low heat and you will be really rewarded with a wonderful flavor filled chili. You will want to make this chili with a good lean ground chuck and lean ground pork. Virgin olive oil is also very important when your making this chili.Use a tablespoon of extra virgin olive oil to fry your meat in.
You will want to start by cooking your ground beef , ground pork , 1/4 Cup of Chili Powder , 1 tablespoon cumin and 1 tablespoon ground sea salt in a large skillet. Cook until your meat is brown and then drain away any grease.
Now to a large stock pot you will want to add.
1. 4 regular size cans pinto beans.
2. 2 regular size cans white navy beans,
3. 2 large cans kidney beans.
4. 2 regular size cans black beans.
5. 1 cup very fine chopped bell pepper.
6. 3 jalapeno peppers with stems removed and then diced fine.
7. 1 cup fine diced sweet purple onion.
8.. 2 tablespoons fresh chopped garlic.
9. 1 cup chopped green onion including tops.
10. 1 tablespoon cayenne pepper powder.
11. 2 16 ounce beers.
12. 1 26 ounce can diced tomatoes.
13. 1 6 ounce can tomato paste.
14. 1 tablespoon black pepper.
You will want to mix and stir together all your ingredients together well and start to cook over low heat for two to three hours. After two to three hours your liquid in your chili should be rich and thick. You will want to keep in mind that the beer will add real flavor to your chili and the alcohol in the beer will cook away. If you don't want to use beer use apple juice for a slightly different but tasty treat.
You can serve this chili over corn bread or Mexican cornbread and you will want to serve the below on the side to let your guests at your chili party create their own unique chili.
1. bowl of guacamole.
2. bowl of sour cream.
3. bowl of shredded Mexican cheese
4. bowl of diced or sliced jalapeno peppers.
5. huge bowl of tortilla chips.
6. bowl of diced green onions with tops.
7. huge bowl of cooked white rice.
Set up the above items in bowls so people can add what they want to in their bowls of chili. You may also want to serve squares of Mexican cornbread and regular cornbread.
