Chocolate Meringue Pie
This pie is so rich and smooth, and it's easy to make! The recipe has been in my family every since I can remember, which just happens to be a long time!
Ingredients:
1 2/3 cups of water
3 tablespoons cornstarch
5 tablespoons cocoa
1 (14 ounce) can sweentned condensed milk
3 egg yolks, slightly beaten
2 tablespoons butter or margarine
1 teaspoon vanilla
1 (9 inch) baked pie shell
Filling:
Step 1: Mix the water, cornstarch, and cocoa until smooth.
Step 2: Stir in the condensed sweetened mily and egg yolks.
Step 3: Cook the mixture until thick in a saucepan.
Step 4: Stir in the butter and vanilla.
Step 5: Cool slightly (stirring occasionally).
Step 6: Pour into the baked pie shell.
Merinque:
3 egg whites
1 teaspoon vanilla
1/4 teaspoon cream of tartar
7 tablespoons sugar or Splenda
Step 1: Put the egg whites, vanilla, and cream of tarter in a mixing bowl. Beat on medium speed for a minute or two, just until soft peaks form.
Step 2: Add the sugar to the mixture 1 tablespoon at a time, while beating on high speed. Beat until the meringue forms stiff peaks and the sugar has dissolved, about 5 minutes.
Step 3: Spread the meringue over the pie, making sure to seal the edges to prevent the meringue from shrinking. This also helps to keep the meringue from “weeping” around the edges.
Step 4: Bake in a 350 degree pre-heated oven just until golden brown.
